Chocolate Marshmallow Meltaways

I hope you are enjoying #ChristmasCookies Week, I know I am! I've already changed my holiday baking list three times, and I'm sure I'll be adding to it again.  These Chocolate Marshmallow Meltaways from Taste of Home have definitely been added to the list!


The only changes I made to the recipe was to use whole milk instead of 2%, it's what I have on hand, and garnished them with some holiday sprinkles.  The base cookie isn't overly sweet, so it makes it perfect when you add the marshmallow and the frosting to it.  Thank you so much to Joanna S. for sharing her recipe, these were like hot cocoa that you could eat!

Chocolate Marshmallow Meltaways

Ingredients

  • 1/2 cup butter flavored shortening
  • 3/4 cup sugar
  • 1 egg
  • 1/4 cup whole milk
  • 1 teaspoon vanilla extract
  • 1 3/4 cups flour
  • 1/2 cup baking cocoa
  • 1/2 teaspoon salt
  • 1/2 teaspoon baking soda
  • 18 large marshmallows, halved
Frosting
  • 3 tablespoons butter, softened
  • 3 cups confectioner's sugar
  • 3 tablespoons baking cocoa
  • 1/8 teaspoon salt
  • 4 tablespoons whole milk
  • Sprinkles (optional)

Instructions

  1. In a large bowl, cream shortening and sugar until light and fluffy. Beat in the egg, milk and vanilla.
  2. Combine the flour, cocoa, salt and baking soda; gradually add to creamed mixture and mix well. Drop by tablespoonfuls 2 in. apart onto ungreased baking sheets.
  3. Bake at 350° for 8 minutes. Press a marshmallow half, cut side down, onto each cookie; bake 2 minutes longer. Remove to wire racks to cool.
  4. For frosting: In a small bowl, beat the butter, confectioners' sugar, cocoa and salt until smooth. Add enough milk to achieve a spreading consistency. Frost cookies. Garnish with sprinkles, if desired.
