Old Fashioned Fudge Cake

Happy National Chocolate Cake Day! Did you know that chocolate cake wasn't even a thing until 1847?  I had no idea!  It seems that chocolate was primarily used for drinking prior to that. Now I love a good cup of hot chocolate, but I can't imagine a celebration without chocolate cake!

I looked through lots of recipes on Pinterest and cookbooks trying to chose what cake I wanted to make. This Old-Fashioned Fudge Cake from Mary S. caught my eye because it made a 6" round, which is the perfect size for just the 3 of us.

The cake itself isn't overly sweet, so it balances nicely with the frosting.  The only thing I'd do differently next time is to split the cake into two layers and put some of the frosting in between.  It spreads and pipes beautifully and then sets up nicely.  I used a rotary grater on some chocolate chips for the top of the cake.

Thanks to Camilla for hosting our #NationalChocolateCakeDay celebration, and to all of the other Festive Foodies for sharing their recipes! Be sure to go and see what they made using the links down below.

  • 1 egg white
  • 1/2 teaspoon vanilla extract
  • 1 cup plus 2 tablespoons all-purpose flour
  • 4 1/2 teaspoons baking cocoa
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/4 cup 2% milk
  • 1/2 cup boiling water
FROSTING:
  • 3/4 cup sugar
  • 1/4 cup half-and-half cream
  • 2 tablespoons butter
  • 1/3 cup miniature marshmallows
  • 1/4 cup semisweet chocolate chips

Instructions

  1. In a large bowl, cream shortening and sugar until light and fluffy. Add egg, then egg white, beating well after each addition. Stir in vanilla. Combine the flour, cocoa, baking soda and salt; add to the creamed mixture alternately with milk, beating well after each addition. Stir in water until smooth. Pour into a greased and floured 6-in. round baking pan.
  2. Bake at 350° for 40-45 minutes or until a toothpick inserted in the center comes out clean. Cool for 10 minutes before removing from pan to a wire rack to cool completely.
  3. In a small saucepan over low heat, combine the sugar, cream and butter. Bring to a boil; cook and stir for 2 minutes. Remove from the heat; stir in marshmallows and chocolate chips until smooth. Spread frosting over top and sides of cake.

Strawberry Pizzelles

Pizzelles are one of my favorite childhood cookies and I'm constantly looking for ways to put a new spin on them.  Since one of my favorite summer fruits is strawberries, I swapped out the vanilla in the original recipe with strawberry extract.

Easy Stuffed Waffles with Sweet and Savory Fillings

Stuffed waffles are a fun twist on the classic waffle—crispy on the outside and packed with tasty fillings inside. I recently got a stuffed waffle maker, and I’m loving how it turns waffles into little pockets of deliciousness! The best part? You don’t need a strict recipe because this is a perfect “clean out the fridge” meal. Grab whatever leftovers or fillings you have on hand, stuff ’em inside, and waffle away! Here’s what I tried this time, but feel free to get creative and make it your own.
