Slow Cooker Pumpkin Spice Oatmeal


This Pumpkin Spice Oatmeal is made in the slow cooker with pumpkin puree, warm spices, and steel cut oats for an easy fall breakfast.

Fall Flavors Week continues and today I'm sharing my new favorite breakfast, Pumpkin Spice Oatmeal! I found this recipe on the Taste of Home site and it caught my eye because it was done in a slow cooker. 

What You’ll Need

  • Steel cut oats

  • Pumpkin puree

  • Brown sugar

  • Pumpkin pie spice

  • Milk (or almond milk)

  • Water

  • Salt

(Toppings: glazed pecans, Craisins, pepitas, maple syrup — optional but highly recommended.)


How to Make It

I found this recipe on the Taste of Home website and it caught my eye because it was done in a slow cooker. I know everyone’s on the Instant Pot train, but I’m still rocking it old school. 

Start by mixing everything together in a bowl, then spoon it into the slow cooker and let it cook on low for 5 to 6 hours.

It's great straight, but I added some fun toppings too.  Some glazed pecans, some Craisins and a few pepitas and I finished it off with a little drizzle of maple syrup.


Meal Prep Tips

  • Portion it out right away. Divide the oatmeal into jars or containers while it’s still warm. This helps it set up evenly and makes grab-and-go breakfasts easier.

  • Add toppings just before eating. Nuts, seeds, and dried fruit will stay fresher and keep their crunch if you add them just before serving instead of mixing them in ahead.

  • Make it your way. Prefer a no-cook option? Swap the steel cut oats for rolled oats and turn this into pumpkin spice overnight oats. Use almond milk or oat milk if you’d like a dairy-free version.


FAQ

How do I store and reheat this oatmeal?
Store cooled oatmeal in airtight containers in the fridge for 4–5 days. To reheat, add a splash of milk or water and microwave for 1–2 minutes, stirring halfway.

Can I freeze it?
Yes! Freeze individual portions in freezer-safe containers, then thaw overnight in the fridge and reheat with a little extra liquid.

Ingredients

  • 1 can (15 ounces) solid-pack pumpkin
  • 1 cup steel-cut oats
  • 3 tablespoons brown sugar
  • 1-1/2 teaspoons pumpkin pie spice
  • 1 teaspoon ground cinnamon
  • 3/4 teaspoon salt
  • 3 cups water
  • 1-1/2 cups milk
  • Optional toppings: Glazed pecans, Craisins, pepitas, maple syrup, ground cinnamon, brown sugar and milk

Instructions

  1. In a large bowl, combine the first 6 ingredients; stir in water and milk.
  2. Transfer to a greased 3-qt. slow cooker. Cook, covered, on low 5-6 hours or until oats are tender, stirring once.
  3. Serve with toppings as desired.

  4. Jolene, I have a Power Cooker, same idea as an Instant Pot. I use it like a slow cooker with a brown function 😆 I never pressure cook a single thing. This oatmeal looks completely nutritious and delicious! Gorgeous color to it too!
