What You'll Need
French Toast Topping:
3 tablespoons milk
1 large egg, slightly beaten
6 slices cinnamon swirl bread, crusts trimmed, cut into ½-inch cubes
Muffins:
1 cup milk
½ cup melted butter
1 large egg, slightly beaten
1 teaspoon maple flavoring
2 cups all-purpose flour
¾ cup firmly packed brown sugar
2 teaspoons baking powder
½ teaspoon salt
Maple Cinnamon Sugar Topping:
¼ cup maple syrup
2 tablespoons granulated sugar
¼ teaspoon ground cinnamon
How to Make It
1. Preheat oven to 375°F and lightly grease a 12-cup muffin pan or drop in parchment liners.2. Toss the bread cubes with the milk and beaten egg until coated. Set aside.
4. Use a cookie scoop to evenly distribute the batter among the muffin cups.
7. While muffins are warm, brush tops with maple syrup. Mix sugar and cinnamon, then sprinkle over the muffins. Let cool 5 minutes before removing from the pan. Serve immediately.

ReplyDeleteThat is fantastic! I totally did not expect the actual french toast pieces and that makes it so unique and quite appealing. I love turning stale leftovers into pan french toast, but muffins sounds so good for just a small portion.
