Maple French Toast Muffins


Maple French Toast Muffins are soft, tender muffins topped with egg-soaked cinnamon swirl bread that bakes up golden and lightly crisp. Each muffin is brushed with maple syrup and finished with a sprinkle of cinnamon sugar.



This recipe has a couple of extra steps compared to a basic muffin, but they’re what give these muffins their signature texture and flavor. Once everything is prepped, the rest comes together easily.


What You'll Need

French Toast Topping:

  • 3 tablespoons milk

  • 1 large egg, slightly beaten

  • 6 slices cinnamon swirl bread, crusts trimmed, cut into ½-inch cubes

Muffins:

  • 1 cup milk

  • ½ cup melted butter

  • 1 large egg, slightly beaten

  • 1 teaspoon maple flavoring

  • 2 cups all-purpose flour

  • ¾ cup firmly packed brown sugar

  • 2 teaspoons baking powder

  • ½ teaspoon salt

Maple Cinnamon Sugar Topping:

  • ¼ cup maple syrup

  • 2 tablespoons granulated sugar

  • ¼ teaspoon ground cinnamon


How to Make It

1. Preheat oven to 375°F and lightly grease a 12-cup muffin pan or drop in parchment liners.
2. Toss the bread cubes with the milk and beaten egg until coated. Set aside.
3. In a separate bowl, whisk together milk, melted butter, egg, and maple flavoring. In another bowl, combine flour, brown sugar, baking powder, and salt. Stir wet ingredients into dry until just combined.
4. Use a cookie scoop to evenly distribute the batter among the muffin cups.
5. Gently press the coated bread cubes on top of each muffin.
6. Bake 20–25 minutes, or until a toothpick inserted in the center comes out clean.
7. While muffins are warm, brush tops with maple syrup. Mix sugar and cinnamon, then sprinkle over the muffins. Let cool 5 minutes before removing from the pan. Serve immediately.


Tips & Tricks

  • Use a cookie scoop for evenly sized muffins and consistent baking.

  • Press the bread cubes lightly so they stay on top during baking.

  • Let muffins cool slightly in the pan to keep the topping intact.

  • Store leftovers in an airtight container at room temperature for 2–3 days or freeze for longer storage.

  3. That is fantastic! I totally did not expect the actual french toast pieces and that makes it so unique and quite appealing. I love turning stale leftovers into pan french toast, but muffins sounds so good for just a small portion.
