But later in the day, and in the following days, I love having those leftovers in the fridge. My husband makes the best turkey sandwiches. I whip up potato pancakes and stuffing waffles. I'm always on the lookout for new ways to serve them up.
I found this recipe for Spicy Turkey Quesadillas on the Taste of Home website and knew that I would be adding it into my menu this year. I made some minor changes, using what I had on hand. Greek yogurt cream cheese, jarred jalapenos, multigrain wraps. These came together super quickly using the panini press, and they disappeared even quicker.
Spicy Turkey Quesadillas
Ingredients
- 3 ounces cream cheese- I used Greek Yogurt cream cheese
- 1/4 cup chopped fresh or frozen cranberries
- 1 Tablespoon canned chopped jarred jalapenos
- 1 1/2 teaspoons honey
- 1 teaspoon Louisiana style hot sauce
- 4 flour tortillas 6" or Flat out multi grain wraps
- 1 cup diced cooked turkey
Instructions
- Mix first five ingredients until blended; spread over tortillas. Top two tortillas with turkey, then remaining tortillas, pressing lightly. In a large skillet, cook quesadillas over medium heat until lightly browned and heated through, 2-3 minutes per side.
