Lemon Basil Salmon

Once in a while my husband presents me with a cooking challenge and this time around he brought home some salmon.  I've never cooked it and it had a pretty hefty price tag on it, so I turned to my most trusted resource, Taste of Home.

I made a few small changes to the recipe ingredients, I added some minced garlic and I also laid sliced lemons on top of the fillets.  I baked them in the oven at 350º, and they were done to his liking at around 22 minutes.

He absolutely loved it! I didn't even get a chance to take pictures of it on the plate he dug into it so fast.  I'm looking forward to trying it outdoors on our fire pit in the spring!

Ingredients

  • 2 salmon fillets (5 ounces each)
  • 1 tablespoon butter, melted
  • 1 tablespoon minced fresh basil
  • 1 teaspoon minced garlic
  • 1 tablespoon lemon juice
  • 1/8 teaspoon salt
  • 1/8 teaspoon pepper
  • Lemon slices

Instructions

  1. Heat oven to 350º. Place each fillet, skin side down, on a piece of heavy-duty foil (about 12 in. square).
  2. Mix melted butter, basil, garlic, lemon juice, salt and pepper; spoon over salmon. Lay slices of lemon on each fillet. Fold foil around fish, sealing tightly.
  3. Cook until fish just begins to flake easily with a fork, 20 to 25 minutes. Open foil carefully to allow steam to escape.

Strawberry Pizzelles

Pizzelles are one of my favorite childhood cookies and I'm constantly looking for ways to put a new spin on them.  Since one of my favorite summer fruits is strawberries, I swapped out the vanilla in the original recipe with strawberry extract.

Easy Stuffed Waffles with Sweet and Savory Fillings

Stuffed waffles are a fun twist on the classic waffle—crispy on the outside and packed with tasty fillings inside. I recently got a stuffed waffle maker, and I’m loving how it turns waffles into little pockets of deliciousness! The best part? You don’t need a strict recipe because this is a perfect “clean out the fridge” meal. Grab whatever leftovers or fillings you have on hand, stuff ’em inside, and waffle away! Here’s what I tried this time, but feel free to get creative and make it your own.
