If you love cookies and cream desserts, you will love these Cookies and Scream Cupcakes! Fluffy white cupcakes have crushed cookies folded into the batter and a whole cookie hidden at the bottom. They’re topped with creamy frosting, colorful Halloween sprinkles, and Peeps ghosts. Best of all, they’re quick and easy to make with a simple cake mix.
I used Halloween Boo Oreos and a tub of Oreo Cream Flavored whipped frosting. I made them with a white cake mix, but chocolate cake would work just as well.
What You'll Need

1 box white cake mix (plus egg whites, oil, and water as directed)

1 package Oreos (12 whole for bottoms, 10 crushed for folding into batter) + more for decoration

1 container store bought white frosting or Oreo Creme frosting

Halloween sprinkles, Peeps Ghosts
How to Make the Cupcakes
1. Preheat oven to 350°F. Line a cupcake pan with paper liners. Place an Oreo into the bottom of each cup.
2. Mix cake batter according to box directions, then fold in crushed Oreos.
3. Fill each liner to the top of the tin with batter, I like to use a cookie scoop.
4. Bake 18–22 minutes, or until a toothpick comes out clean. Cool completely.
5. Pipe or spread frosting on top, then decorate with sprinkles, Peeps ghosts, and extra Oreos.
Tips & Tricks

Bake cupcakes up to 2 days ahead and store unfrosted cupcakes in an airtight container. Frost and decorate the day of your party for best texture.

Transfer frosting to a bowl and beat with a mixer to make it fluffier.

Place a pastry bag in a cup while filling it to keep it upright and make filling it easier.
These cupcakes have become one of my favorite recipes because they’re fast, reliable, and easy to dress up for any theme. The hidden Oreo on the bottom always gets a smile, and using cake mix keeps prep simple.
