Upside Down Bacon Apple Pancake

 

U is for Upside Down!

This Upside-Down Bacon Apple Pancake bakes up golden and caramelized in one skillet. Crispy bacon, sweet brown sugar, and grated apple create a sticky-sweet topping that’s as beautiful as it is delicious.


What You’ll Need

For the Bacon Apple Topping:

  • 6 bacon strips, coarsely chopped

  • 1/4 cup packed brown sugar

  • 1 medium apple, grated

For the Pancake Batter:

  • 2 cups Original Bisquick pancake mix

  • 3 tablespoons sugar

  • 2 teaspoons baking powder

  • 1 cup milk

  • 2 tablespoons vegetable oil

  • 2 eggs

  • 1 teaspoon vanilla

Optional: maple syrup and butter, if desired

    How to Make It

    1. Preheat oven to 350°F.
    2. Cook the bacon in a 10-inch oven-safe skillet until crispy. Remove and drain excess grease.


    3. Make the batter: In a bowl, combine pancake mix, sugar, baking powder, milk, oil, eggs, and vanilla until blended.

    4. Assemble: Sprinkle brown sugar evenly in the skillet, then layer bacon and grated apple over it.


    5. Pour the batter on top.

    6. Bake for about 20 minutes, or until puffed and golden.

    7. Flip and serve: Cool slightly before inverting onto a serving plate. Serve warm with maple syrup and butter, if desired.



      Tips & Tricks

      • Choose the right apple: Firm apples like Honeycrisp or Fuji work best—they hold their shape and give a nice balance of sweetness and tartness.
      • Add more crunch: Sprinkle a few chopped walnuts or pecans over the apple-bacon layer for a nutty twist.
      • Fix sticky spots: If some of the apple-bacon topping sticks to the skillet when flipping, gently press it back onto the pancake with a spatula before serving.

      Instructions

      For the pancake batter

      2. Cook Bacon: In a 10-inch oven-safe skillet, cook the chopped bacon over medium heat until crispy. Remove the bacon and set aside. Drain excess grease from the skillet.
      3. Make Pancake Batter: In a bowl, combine the pancake mix, sugar, baking powder, vegetable oil, eggs and vanilla until blended.
      4. Assemble: Sprinkle the brown sugar evenly in the skillet. Place the cooked bacon on top of the sugar. Add grated apple. Stir until combined. Pour the pancake batter over the top.
      5. Bake: Transfer the skillet to the oven and bake for 20 minutes, or until the pancake is golden brown and puffed up.
      6. Serve: Allow the pancake to cool for a few minutes before flipping it onto a serving plate. Serve warm with maple syrup and butter, if desired.

      2. Scrumptious! I used Bisquick often when I was learning to bake, and I haven't gotten any in years. Bisquick pancakes and velvet crumb cake were some of my favorites.
