Apple Cinnamon Shortcakes

Sadly, #AppleWeek is coming to a close.  I hope you've enjoyed all the amazing apple recipes that have been shared!  I've had a great time participating and look forward to more events in the future.

We are huge fans of traditional shortcake.  I was very excited to see this fall spin on it.    I made no changes at all to the recipe, and my shortcakes baked in 19 minutes.    I added a drizzle of caramel to my serving, the guys enjoyed theirs with whipped cream.   Thank you so much to the Taste of Home Test Kitchen for this amazing new family favorite!

  1           teaspoon  ground cinnamon
     1/2      teaspoon  salt
  1                cup  heavy whipping cream
1/2           cup  plus 4 teaspoons melted butter -- divided
                        FILLING:

     1/8      teaspoon  ground nutmeg

In a large bowl, combine the flour, 2 tablespoons sugar, baking powder, cinnamon and salt. In a small bowl, combine cream and 1/2 cup butter; stir into dry ingredients just until moistened.

Drop dough by 1/4 cupfuls 2 in. apart onto a greased baking sheet. Brush with remaining butter; sprinkle with remaining sugar. Bake at 375° for 18-20 minutes or until golden brown. Cool slightly.

For filling, in a large skillet, melt butter. Add apples; saute until tender. Stir in the brown sugar, cinnamon and nutmeg. Gently split warm shortcakes in half horizontally. Top bottom halves with apple mixture; replace tops. Serve immediately. Yield: 8 servings.

  1. I love the idea of an apple cinnamon shortcake! I don't know why I only make shortcakes with berries and in the spring??? You have opened my eyes to a whole new world ;-)

    1. Right? It made me start thinking of all kinds of crazy things, like a savory shortcake with roasted tomatoes for summer :)

  2. You rarely need to make any changes to a Taste of Home recipe. These sound wonderful.

    1. That's so true, Wendy. I've been a fan of Taste of Home since the 90s and am so excited to be a part of their Volunteer Field Editor team. Lots of our family favorites start with one of their recipes!

Copycat Dunkin Donuts Egg White & Veggie Omelet Bites

I'm a huge fan of the Dunkin Donuts Power Breakfast sandwich, so when I started seeing ads for the new Egg White & Veggie Omelet Bites I stopped in and gave them a try.  They were delicious, but of course, I knew I could make them at home.

Stuffed Waffles

I wasn't sure I was going to blog these stuffed waffles since it was the first time I tried using the new iron but since I'd already taken the pics as I went I figured, why not? They aren't perfect but they are delicious!

Copycat Dunkin Donuts Bacon and Cheddar Omelet Bites

Since I already came up with a version of Dunkin Donuts new Egg White & Veggie Omelet Bites for myself, I decided to make the other variety that they are offering, Bacon & Cheddar, for my husband.
