Strawberry Rhubarb Squares

I've been spending some time going through my Gram's recipe box, and there are so many treasures in there.  There was a recipe for Blueberry Squares, but there's still a ways to go before blueberries are ready here.   This is a sponsored post.  I received products to use in the creation of my #CookoutWeek recipes. All opinions are my own. When my products arrived from Better Butter Craft Butter, one of them was a Strawberry Honey Butter, and my wheels got to turning.  I could use the butter, fresh picked strawberries and why not throw in some rhubarb? I subbed 1/2 cup Strawberry Honey Butter for the regular butter. I ended up using 2 cups diced strawberries and 1 cup sliced rhubarb. The rest of the recipe remained the same.   The smell of the squares baking was absolutely amazing.   They were perfect with a simple dusting of powdered sugar, but could also be topped with a powdered sugar glaze. Slow Cooker Garlic Butter Corn on the Cob

Sweet summer corn is one of my favorite side dishes, but I don’t love boiling a big pot of water on a hot day. Cooking corn on the cob in the slow cooker keeps things cool and easy. This garlic butter version adds even more flavor, it's perfect for weeknights, cookouts, or any summer meal. What You'll Need 6 ears of corn, husked 6 tablespoons garlic herb butter (or your favorite compound butter) Salt and freshly cracked black pepper, to taste 1 inch of water in the bottom of the slow cooker Heavy-duty aluminum foil How to Make It Prep the foil packets Tear six large squares of heavy-duty aluminum foil—enough to completely wrap each ear of corn. Season the corn Place each ear of corn on a piece of foil. Spread about 1 tablespoon of garlic herb butter over each one, then season lightly with salt and pepper. Happy Taste of Home Tuesday!  I can't believe it's been 3 years since I was selected to be a Community Cook for Taste of Home magazine! I started reading them way back in the 90s when my Gram subscribed, and I've got almost every issue back to the premiere.  I've had two recipes published and have made more than 225 recipes from the magazines, cookbooks and their website.  They're always winners with my family!

Fresh Strawberry Salsa

  June is National Fruits & Vegetables Month! The thing I most look forward to in June is strawberries.   We're very lucky to live around lots of farms, and we make going to pick a family outing.   Usually we bring home somewhere around 15 pounds.   We leave some for snacking, a bunch gets turned into jam, and then I like to try a handful of new recipes.   One of this year's picks is this Fresh Strawberry Salsa from Taste of Home.

The weather is heating up here, and I've been searching the Taste of Home site and my magazines for meals and snacks that are delicious and filling, but not heavy.   This Inside Out Veggie Dip fit the bill nicely.
