Roasted Sugar Snap Peas

Happy Taste of Home Tuesday!  I can't believe it's been 3 years since I was selected to be a Community Cook for Taste of Home magazine! I started reading them way back in the 90s when my Gram subscribed, and I've got almost every issue back to the premiere.  I've had two recipes published and have made more than 225 recipes from the magazines, cookbooks and their website.  They're always winners with my family!

I hit the local farmstand over the weekend and they had beautiful sugar snap peas, and it only took me a few minutes of searching my pinterest board to decide what to make.  I love roasted vegetables so much more than boiled or steamed ones.   These Roasted Sugar Snap Peas are super fast and super delicious.  I was unable to find a shallot, so I used Bermuda onion instead.  

To be honest, I made them in the afternoon so I could take pictures intending on eating them with dinner.  They didn't last that long.  Crisp but tender, perfectly seasoned.   The Test Kitchen knocked it out of the park with this one, and it definitely is going into the menu rotation.

Roasted Sugar Snap Peas

  • 1 package fresh sugar snap peas (8 ounces) trimmed
  • 1 tablespoon chopped shallot (I used bermuda onion)
  • 2 teaspoons olive oil
  • 1/2 teaspoon Italian seasoning
  • 1/8 teaspoon salt


How to cook Roasted Sugar Snap Peas

  1. Preheat oven to 400°. Toss together all ingredients; spread in a 15x10x1-in. pan. Roast until peas are crisp-tender, 8-10 minutes, stirring once.

Mmm! Sugar snap peas are on of my favorite veggies, but I hardly ever get them. I really need to change that! These look fantastic!

LOVE sugar snap peas, but I usually eat them raw with hummus. Definitely going to try your recipe - I'll see if I can convert the rest of my family into snap pea lovers :-)

Oh, I've been eating lots of hummus with cut up bell pepper lately, I'll definitely have to try it with snap peas! Thank you!

They're one of the few green veggies I can get my kid to eat, so I try to grab them every time I see them :)

I never thought of roasting snap peas. I think so many people just think of stir fries and salads with this vegetable. I am betting the flavor is phenomenal!

We've been growing sugar snap peas this year, as we have the last few years, and love them. We usually eat them raw or occasionally stir fried but haven't tried roasting. One to try when we get some more!
Now if only I had sugar snap peas growing in my garden!!!

Copycat Dunkin Donuts Egg White & Veggie Omelet Bites

I'm a huge fan of the Dunkin Donuts Power Breakfast sandwich, so when I started seeing ads for the new Egg White & Veggie Omelet Bites I stopped in and gave them a try.  They were delicious, but of course, I knew I could make them at home.  I started with the whites of six eggs. You can use pasturized whites if you don't want to do the whole separating, finding a use for the yolks thing.  I beat them up with some salt and pepper. Next up, the tomato and spinach.  I used grape tomatoes, seeded them and then chopped them into 1/4" pieces. I like baby spinach, and I took about 10 leaves and chopped those up into 1/4" pieces as well. I added that to the egg mixture.  When you pour it into the pans, be sure that it all gets evenly distributed.   They bake up pretty quickly, around 9 minutes or so.  Dunkin gives you two egg bites, the mini donut serving size is three. Copycat Dunkin Donuts Bacon and Cheddar Omelet Bites

Since I already came up with a version of Dunkin Donuts new Egg White & Veggie Omelet Bites for myself, I decided to make the other variety that they are offering, Bacon & Cheddar, for my husband. Super simple.  Beat up some eggs with salt and pepper.  Add in some shredded cheddar and a slice of bacon cut into 1/4" pieces (I used kitchen shears).  Bake them for about 9 minutes in sprayed mini donut pans. They baked up light and fluffy.  The bacon stayed crisp and there's just the perfect amount of cheese.   I split them up into portions in zip top bags and that way we can just grab a bag and warm them up. My husband laughed when I told him 3 is the serving size.  I'll definitely be doubling the recipe next time! Strawberry Pizzelles

Pizzelles are one of my favorite childhood cookies and I'm constantly looking for ways to put a new spin on them.  Since one of my favorite summer fruits is strawberries, I swapped out the vanilla in the original recipe with strawberry extract.  This post is sponsored in conjunction with #SummerDessertWeek !  I received product samples from sponsor companies to aid in the creation of my recipes.
