Gingerbread Overnight Oats

Gingerbread Overnight Oats are a quick, spiced, and creamy breakfast you can prep ahead for busy holiday mornings. They’re portioned in jars for an easy grab-and-go option.

They're packed with warm spices like cinnamon, ginger, and clove, and get their creamy texture from vanilla Greek yogurt and milk. Prep them the night before, refrigerate, and enjoy a hassle-free start to your day.

  • ¾ teaspoon ground cinnamon

  • ½ teaspoon ground ginger

  • 1/8 teaspoon ground clove

  • 1 cup 2% milk

  • 4 tablespoons vanilla Greek yogurt

  • 1/2 teaspoon molasses

  • Optional toppings: dried cranberries, toasted pecans, diced apple or pear, mini chocolate chips

How to Make It

1. In a medium bowl, combine the oats, brown sugar, cinnamon, ginger, and clove.
2. Add the milk, Greek yogurt, and molasses. Stir until everything is fully combined.
3. Divide the mixture evenly between two pint jars. Put the lids on and refrigerate overnight, at least 6 hours.

Strawberry Pizzelles

Pizzelles are one of my favorite childhood cookies and I'm constantly looking for ways to put a new spin on them.  Since one of my favorite summer fruits is strawberries, I swapped out the vanilla in the original recipe with strawberry extract.

Easy Stuffed Waffles with Sweet and Savory Fillings

Stuffed waffles are a fun twist on the classic waffle—crispy on the outside and packed with tasty fillings inside. I recently got a stuffed waffle maker, and I’m loving how it turns waffles into little pockets of deliciousness! The best part? You don’t need a strict recipe because this is a perfect “clean out the fridge” meal. Grab whatever leftovers or fillings you have on hand, stuff ’em inside, and waffle away! Here’s what I tried this time, but feel free to get creative and make it your own.
