Toasted Mexican Ravioli

Even if you're not a sports fan, here's something you can cheer for- Toasted Mexican Ravioli! I've made breaded raviolis before, and they are always a hit there.   This fun spin on them is perfect to snack on while watching your favorite team.

I only made one change to the recipe, and that was to use salsa instead of enchilada sauce.   Thank you so much to Cristy K for sharing the recipe. Be sure to check out even more amazing #FootballFood recipes at the bottom of the post!

Ingredients

  • 3 large eggs
  • 1/4 cup buttermilk
  • 1 1/2 cups dry bread crumbs
  • 1 envelope taco seasoning

  • Oil for frying
  • 1 cup shredded Monterey Jack cheese -- (4 ounces)
  • 1/2 cup salsa or enchilada sauce
  • 1/2 cup sour cream
  • Fresh or pickled jalapeno slices -- optional

Instructions

  1. In a shallow bowl, whisk eggs and buttermilk. Mix bread crumbs and taco seasoning in a separate shallow bowl. Dip ravioli in egg mixture, then in crumb mixture, patting to help coating adhere.
  2. In an electric or deep skillet, heat 1/2 in. of oil to 375°. Fry ravioli, a few at a time, 1-2 minutes on each side or until golden brown. Drain on paper towels; immediately sprinkle with cheese.

Strawberry Pizzelles

Pizzelles are one of my favorite childhood cookies and I'm constantly looking for ways to put a new spin on them.  Since one of my favorite summer fruits is strawberries, I swapped out the vanilla in the original recipe with strawberry extract.

Easy Stuffed Waffles with Sweet and Savory Fillings

Stuffed waffles are a fun twist on the classic waffle—crispy on the outside and packed with tasty fillings inside. I recently got a stuffed waffle maker, and I’m loving how it turns waffles into little pockets of deliciousness! The best part? You don’t need a strict recipe because this is a perfect “clean out the fridge” meal. Grab whatever leftovers or fillings you have on hand, stuff ’em inside, and waffle away! Here’s what I tried this time, but feel free to get creative and make it your own.
