Baked S'mores Donuts


You could definitely say we're S'mores obsessed around here.  I've made muffins, french toast, milkshakes, creme brulee and now donuts!  I found the recipe in Sara Mellas' Easy Baked Donut cookbook, it's one of many that I've marked to try.

The base donut recipe has graham cracker crumbs along with all of the regular ingredients.  I got 12 full size donuts and 12 minis out of one batch of batter.  Yes, one of the minis is missing, it's called quality control ;) The minis cooked in about 7 minutes, the full size in about 13.


 
For the chocolate ganache I used 3/4 cup of semi sweet chocolate morsels.  I wasn't sure it would turn out in the microwave, but I had no problems with seizing or it not getting smooth. 

I used my kitchen torch to toast the marshmallows because it's fun.  You can also do them under the broiler, just watch them carefully so that they don't burn.

S'mores Donuts

S'mores Donuts

Ingredients

  • For the chocolate ganache:
  • 4 ounces semi sweet chocolate
  • 1 Tablespoon butter
  • 1/3 cup heavy cream
For the donuts:
  • Nonstick cooking spray
  • 6 Tablespoons butter, melted
  • 1 Tablespoon canola oil
  • 1/2 cup packed Dixie Crystals light brown sugar
  • 3 Tablespoons Dixie Crystals granulated sugar
  • 2 large eggs (room temperature)
  • 1 teaspoon vanilla
  • 1/2 cup sour cream (room temperature)
  • 1/2 cup milk (room temperature)
  • 1 3/4 cups flour
  • 3/4 cup graham cracker crumbs
  • 2 teaspoons baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/4 teaspoon cinnamon
Topping
  • 1 cup miniature marshmallows

Instructions

  1. Heat the oven to 350º, spray donut pans with nonstick cooking spray.
  2. In a large mixing bowl, whisk together butter, oil, brown sugar, granulated sugar, eggs, vanilla, sour cream and milk.
  3. Add flour, graham cracker crumbs, baking powder and soda, salt and cinnamon. Whisk until the mixture is well combined and smooth.
  4. Spoon batter into piping bag and fill donut pans a little over 3/4 full.
  5. Bake on the middle rack of the oven for about 13 mins or until the donut tests clean with a toothpick.
  6. Let cool in pans for 10 mins, then move to a rack to cool completely.
  7. For the ganache:
  8. Add chocolate and butter to a microwave safe bowl. Microwave in 30 second intervals, just until chocolate softens. Add cream, then microwave for an additional 20 to 30 seconds, just until the cream bubbles.
  9. Gently stir until the chocolate is completely melted and the mixture is smooth and glossy. If there's any unmelted chocolate, microwave for another 10 seconds, stirring after each time.
  10. Dip tops of donuts into ganache, letting the excess drip off, then place onto a baking sheet. Press on 6 or 7 marshmallows.
  11. Place sheet into the freezer to help the ganache set up, about 15 mins.
  12. Remove donuts from freezer. Using a kitchen torch, toast the marshmallows.

Notes

Note: If you don't have a torch, just pop the baking sheet of donuts under the broiler until the marshmallows are browned, about 30 seconds to 1 minute., watching them carefully so they don't burn.

Copycat Dunkin Donuts Egg White & Veggie Omelet Bites

I'm a huge fan of the Dunkin Donuts Power Breakfast sandwich, so when I started seeing ads for the new Egg White & Veggie Omelet Bites I stopped in and gave them a try.  They were delicious, but of course, I knew I could make them at home.  I started with the whites of six eggs. You can use pasturized whites if you don't want to do the whole separating, finding a use for the yolks thing.  I beat them up with some salt and pepper.   Next up, the tomato and spinach.  I used grape tomatoes, seeded them and then chopped them into 1/4" pieces. I like baby spinach, and I took about 10 leaves and chopped those up into 1/4" pieces as well. I added that to the egg mixture.  When you pour it into the pans, be sure that it all gets evenly distributed. They bake up pretty quickly, around 9 minutes or so.  Dunkin gives you two egg bites, the mini donut serving size is three. Stuffed Waffles

I wasn't sure I was going to blog these stuffed waffles since it was the first time I tried using the new iron but since I'd already taken the pics as I went I figured, why not? They aren't perfect but they are delicious! I'd seen videos floating around TikTok and Instagram of people making stuffed waffles so I hopped over to Amazon and ordered the Elite Gourmet version.  The instructions were fairly straightforward but there was no recipe so I made up a batch of Classic Waffle batter. Then I scoured the fridge for things to stuff them with.    First up, some leftover taco meat from the previous night and Fiesta blend cheese,  pepperoni and mozzarella cheese and lastly some strawberries and cream cheese.   For the taco stuffed I added the taco meat and cheese in the middle and then set out some salsa and sour cream to top them with.  Learning curve lesson 1- make sure your ingredients are all room temp before you start, they will bake much quicker.  For the pepperoni pi

Copycat Dunkin Donuts Bacon and Cheddar Omelet Bites

Since I already came up with a version of Dunkin Donuts new Egg White & Veggie Omelet Bites for myself, I decided to make the other variety that they are offering, Bacon & Cheddar, for my husband. Super simple.  Beat up some eggs with salt and pepper.  Add in some shredded cheddar and a slice of bacon cut into 1/4" pieces (I used kitchen shears).  Bake them for about 9 minutes in sprayed mini donut pans. They baked up light and fluffy.  The bacon stayed crisp and there's just the perfect amount of cheese.   I split them up into portions in zip top bags and that way we can just grab a bag and warm them up. My husband laughed when I told him 3 is the serving size.  I'll definitely be doubling the recipe next time!
