Waffles with Berry Infused Buttercream

  
August 24th is National Waffle Day! We've got quite a few family favorite recipes but I wanted to give something new a try and I found this recipe on the Blendtec website. Both the batter and the berry infused buttercream are made in the blend, which makes it super easy.  

One of my other favorite countertop appliances is my Presto Flipside Belgian waffle maker.  I've had lots of other waffle makers but this consistently puts out waffles that are crisp on the outside and soft on the inside. 

 

My buttercream turned out a bit thin but I was okay with that. I used strawberries that I picked up at a local farm and blueberries from our patch. It tasted great and wasn't overly sweet.

 
I love how the little pockets catch the buttercream and I topped them off with more blueberries. You definitely can swap out the fruits for whatever you like, I'm looking forward to trying them again in a few weeks with some of our blackberries!

Waffles with Berry Infused Buttercream

Ingredients

For the buttercream:
  • 10oz heavy whipping cream
  • 4 tablespoons granulated sugar
  • 6 strawberries
  • 1/2 cup blueberries
For the batter:
  • 3 large eggs
  • 2 cups milk
  • 1 tablespoon canola oil
  • 1 teaspoon vanilla extract
  • 2 tablespoons granulated sugar
  • 1 teaspoon salt
  • 3 tablespoons baking powder
  • 3 cups flour

Instructions

Make berry infused buttercream-
  1. Add cream and 4T sugar to blender. Secure lid and blend on low speed for 30 seconds or until the cream solidifies.
  2. Add berries and secure lid. Blend on low speed for 20 to 30 seconds or until berries are incorporated. Move to bowl and refrigerate at least one hour.
For the waffles:
  1. To clean blender jar add eggs, milk, oil, and vanilla. Use batter setting to blend.
  2. Add 2T sugar, salt, baking powder and flour. Secure lid and pulse until the ingredients are incorporated. Do not over blend. Rest batter for five minutes.
  3. Heat waffle iron to medium high, coat with nonstick spray. Add batter according to manufacturer's instructions. Cook until golden brown. Repeat with remaining batter.
  4. Serve waffles topped with berry infused buttercream.
