Nutmeg Belgian Waffles



We are big waffle fans here.   I'm always looking for something fun, something different, a little twist.   I found this recipe on tasteofhome.com.    I used whole milk, it's what we always have on hand.  I used my belgian waffle maker, and got 2 waffles. 

Next time I'd double the recipe.    I love the nutmeg flavor, it worked well with some real NH maple syrup.    I plan on making these again for our Christmas Eve breakfast.   Thank you to James C for sharing your recipe  :) 

Nutmeg Waffles

Nutmeg Waffles
Yield: 2

Ingredients

  • 1 1/4 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon salt
  • 1/2 teaspoon ground nutmeg
  • 1/4 teaspoon baking soda
  • 1 egg -- lightly beaten
  • 1 cup milk
  • 1 teaspoon canola oil
  • 1 teaspoon vanilla extract
  • Butter and maple syrup -- optional

Instructions

  1. In a small bowl, combine the flour, baking powder, cinnamon, salt, nutmeg and baking soda. In another bowl, combine the egg, milk, oil and vanilla; stir into dry ingredients until smooth.
  2. Bake in a preheated waffle iron according to manufacturer's directions until golden brown. Serve with butter and syrup if desired.

  2. They had a good texture for a recipe that you don't separate the eggs. If you wanted them even fluffier, you could definitely do that and whip the whites and fold them back in.
