Calico Pepper Frittata

This colorful Calico Pepper Frittata is a simple, protein-packed breakfast made with sweet bell peppers, fluffy eggs, and melty cheese. It is baked in a skillet and finished under the broiler for a lightly golden top.


If you need a vegetable-forward egg dish that reheats beautifully, this one delivers. The mix of red, yellow, and green peppers gives it bright flavor and a beautiful presentation without extra effort.


I know it sounds crazy, but I just started cooking eggs this year. I didn’t really care for them as a kid, and my son had a sensitivity when he was little, so I never made them at home. Lately I’ve been trying to expand my food world, and this Calico Pepper Frittata felt like an easy place to start. With all the colorful bell peppers and melty cheese, it didn’t feel like a plain egg dish.


The only change I made was skipping the green bell peppers and using red, yellow, and orange instead. When it finished baking, the center was set but the top wasn’t quite done enough for me, so I slid it under the broiler for a few minutes. That extra step made all the difference. I absolutely loved this.


I've been eating healthier for a few months now, and it was a great way to get in my veggies and protein.  It reheated great and made a perfect on-the-go breakfast. 

What You'll Need

  • 6 large eggs

  • ½ cup milk

  • 1 cup each diced red, yellow and orange bell pepper

  • ½ cup shredded cheddar cheese (or cheese of your choice)
  • ½ tsp salt

  • ¼ tsp black pepper

  • 1 tbsp olive oil

(Optional: onion or shallot for extra flavor)

How to Make It

  1. Preheat oven to 375°F (190°C).
  2. Heat olive oil in an oven-safe skillet over medium heat. SautĂ© peppers (and onion, if using) until tender, about 5–7 minutes.
  3. In a bowl, whisk eggs, milk, salt, and pepper. Pour eggs over the vegetables in the skillet. Cook gently for 2–3 minutes until edges begin to set.
  4. Sprinkle cheese evenly on top. Transfer skillet to the oven and bake for 12–15 minutes, or until the center is almost set.
  5. For a lightly golden top, broil 1–2 minutes until desired doneness. Let rest for 3–5 minutes before slicing.

Easy Variations

  • Add cooked sausage or diced ham for a heartier version.
  • Stir in spinach or mushrooms with the peppers.
  • Swap cheddar for feta or mozzarella.
  • Add a pinch of red pepper flakes for gentle heat.

Storage and Reheating

  • Store slices in an airtight container in the refrigerator for up to 4 days.

  • Reheat in the microwave in short intervals or warm in a 300°F oven until heated through.

  • Can also freeze individual slices for up to 2 months; thaw overnight in the fridge before reheating.

Serving Ideas

Serve with fresh fruit, toast, or a simple green salad for a balanced meal. It also pairs well with roasted potatoes for brunch.

Ingredients

  • 5 large eggs
  • 1 1/4 cups egg substitute
  • 1 Tablespoon grated Romano Cheese
  • 1/2 teaspoon salt
  • 1/8 teaspoon pepper
  • 1 Tablespoon olive oil
  • 3 medium sweet red yellow and orange peppers, chopped
  • 1 jalapeno pepper, seeded and chopped
  • 1 onion, medium, chopped
  • 1 garlic clove, minced

Instructions

  1. In a large bowl, whisk the first five ingredients until blended. In a large nonstick skillet, heat oil over medium-high heat.
  2. Add peppers and onion; cook and stir until tender. Add garlic; cook 1 minute longer. Pour in egg mixture. Mixture should set immediately at edges.
  3. Cook, uncovered, 8-10 minutes or until eggs are completely set, pushing cooked portions toward the center and letting uncooked eggs flow underneath. Cut into wedges and serve.
