Brown Sugar Bacon Palmiers

I hope you are enjoying Brunch Week as much as I am! When my supply of Dixie Crystals light brown sugar arrived, I started a list of possible things to bake.  We are big fans of bacon coated with brown sugar and baked, and I wanted to capture that flavor and combine it with a favorite dessert of ours, palmiers or elephant ears.

All you need is a box of puff pastry from the freezer section, light brown sugar, and cooked bacon.   Defrost the puff according the package directions.  Gently roll it out so that it's longer than it is wide. Top it with the light brown sugar, then sprinkle on some chopped bacon.

Roll the ends in from the short sides, keeping it as tight as possible, and meeting in the middle. Place the roll on a cookie sheet, and then repeat with the other piece of puff. Place them into the fridge for an hour to chill.

Using a sharp knife, slice the rolls into 1/2" sections.  I'm a bit type A, so I use a ruler :) Place them onto parchment lined cookie sheets and bake them in a preheated 400 degree oven for about 14 minutes.

I don't often say this, but these would be great without the bacon too.  Sweet, buttery and delicious, they go great with a cup of coffee or tea.

Brown Sugar Bacon Palmiers

Ingredients

  • 1 box puff pastry
  • 1 cup Dixie Crystals light brown sugar
  • 6 slices cooked bacon

Instructions

  1. Defrost puff pastry according to package directions. Working with one sheet at a time, roll out slightly to a rectangular shape. Top with half the light brown sugar. Sprinkle with half of the bacon.
  2. Roll from the short ends towards the center, keeping it tight and meeting in the middle. Place onto a cookie sheet. Repeat with the remaining ingredients. Chill rolls for 1 hour.
  3. Preheat oven to 400 degrees. Slice rolls in 1/2" pieces. Place onto parchment lined sheets. Bake for 13 to 15 minutes or until golden brown.
