I'm closing out #BacktoSchoolTreats Week with something that's always a winner here- cookies! They are by far my favorite thing to bake, and I'm always on the hunt for new recipes to try out on my guys.
I found these Lemon Oatmeal Sugar Cookies by Susan M. on the Taste of Home Website. I didn't make any changes to the recipe, but rather than flattening them with a sugared glass, I scooped them and rolled them in raw sugar before placing them on the baking sheet.
I love how these turned out, great flavor and texture. And oats also make them acceptable for breakfast, right?

Lemon Oatmeal Sugar Cookies
Ingredients
- 1 cup butter, softened
- 2 cups sugar
- 2 large eggs, room temperature
- 2 teaspoons grated lemon zest
- 3 tablespoons lemon juice
- 2-3/4 cups all-purpose flour
- 1 cup quick-cooking oats
- 2 teaspoons baking powder
- 1/4 teaspoon salt
- Additional sugar
Instructions
- In a large bowl, cream butter and sugar until light and fluffy. Beat in eggs, lemon zest and lemon juice.
- In another bowl, whisk flour, oats, baking powder and salt; gradually beat into creamed mixture. Refrigerate, covered, 2 hours or until firm enough to shape.
- Preheat oven to 375°. Shape level tablespoons of dough into balls; place 2 in. apart on parchment-lined baking sheets.
- Coat bottom of a glass with cooking spray, then dip in sugar. Press cookies with bottom of glass to flatten, redipping in sugar as needed.
- Bake until edges are light brown, 6-8 minutes. Remove from pans to wire racks to cool.
