Hot Cocoa Cake Mix Cookies

 

Cake mix cookies are simple to make and you can dress them up in so many ways! This Hot Cocoa version features a Triple Chocolate Fudge mix and  Nestle Hot Cocoa and Marshmallow morsels. 


In a large bowl add the cake mix, eggs, vegetable oil and the bag of morsels. Use a hand mixer to combine. 


I use a cookie scoop to get nice uniform balls and I put 8 per baking sheet.  This helps them to bake more evenly. With this bag of morsels I got exactly 24 cookies, 3 sheets worth. 


They bake very quickly, only taking between 8 and 10 minutes.  I let them cool for a few minutes on the sheets and then move them to wire racks to cool completely. 

They are soft on the inside and chewy on the outside and go perfectly with a tall glass of milk!

Ingredients

  • 15.25oz box Betty Crocker Triple Chocolate Fudge cake mix
  • 1/2 cup vegetable oil
  • 2 large eggs
  • 12 ounce bag Nestle Hot Cocoa and Marshmallow flavored morsels

Instructions

  1. Heat oven to 350°.
  2. Mix together cake mix, food coloring, oil, eggs and morsels. Place dough in the fridge to chill, about 15 minutes.
  3. Scoop by tablespoons and place on parchment lined cookie sheets.
  4. Bake for 8 minutes, you want them just set. Let cool on the pan for 2 minutes. Move to a wire rack to cool completely.

*If you can't find the Nestle Hot Cocoa and Marshmallow flavored morsels, use 6 ounces of milk chocolate morsels and 6 ounces of Jet Puffed Marshmallow bits.
