Craving something fresh, fruity, and protein-packed? Try this Grilled Chicken Salad with Blueberry Vinaigrette!
It’s an awesome combination of crisp greens, juicy grilled chicken, fresh fruit, and a homemade vinaigrette made with blueberry preserves and maple syrup. Whether you're hosting a summer brunch or just need a flavorful lunch, this dish comes together quickly and tastes like something special.
What you'll need
For the Chicken:

Boneless skinless chicken breast halves, olive oil, garlic clove, salt and pepper
For the Vinaigrette:

Olive oil, blueberry preserves, balsamic vinegar, maple syrup, ground mustard, salt and pepper
For the Salad:
-
Ready-to-serve salad greens, fresh blueberries, mandarin oranges, mozzarella pearls
How to make it:
1. Grill the Chicken
In a small bowl, combine olive oil, garlic, salt, and pepper. Rub mixture over both sides of chicken breasts.
Grill over medium heat for 6–7 minutes per side, or until internal temperature reaches 165°F. Let rest for 5 minutes, then slice thinly.
2. Make the Vinaigrette
In a jar or small bowl, whisk together blueberry preserves, balsamic vinegar, maple syrup, ground mustard, salt, and pepper. Slowly whisk in olive oil until well blended.
3. Assemble the Salad
In a large bowl, layer salad greens, blueberries, mandarin oranges, and mozzarella pearls. Top with grilled chicken slices. Drizzle blueberry vinaigrette over the salad just before serving.
Tips & Variations
- I prefer a garlic rocker over a traditional press—it’s easier to use and clean.
- Make It a Wrap: Use the salad as a filling in a whole grain wrap for an easy lunch option.
- Add Crunch: Sunflower or pumpkin seeds, toasted walnuts or candied pecans bring great texture.
- Try feta or goat cheese instead of mozzarella for bolder flavor.
Grilled Chicken Salad with Blueberry Vinaigrette

Ingredients
- 2 boneless skinless chicken breast halves (6 ounces each)
- 1 tablespoon olive oil
- 1 garlic clove, minced
- 1/4 teaspoon salt
- 1/4 teaspoon pepper
- 1/4 cup olive oil
- 1/4 cup blueberry preserves
- 2 tablespoons balsamic vinegar
- 2 tablespoons maple syrup
- 1/4 teaspoon ground mustard
- 1/8 teaspoon salt
- Dash pepper
- 1 package (10 ounces) ready-to-serve salad greens
- 1 cup fresh blueberries
- 1/2 cup canned mandarin oranges
- 1 cup mozzarella pearls
Instructions
- Toss chicken with oil, garlic, salt and pepper; refrigerate, covered, 30 minutes. In a small bowl, whisk together vinaigrette ingredients; refrigerate, covered, until serving.
- Grill chicken, covered, over medium heat until a thermometer reads 165°, 5-7 minutes per side. Let stand 5 minutes before slicing.
- Place greens on a serving plate; top with chicken, blueberries, mandarin oranges and mozzarella. Whisk vinaigrette again; drizzle over salad.
