Creamy Jalapeño Corn

 

J is for Jalapeño! 

We're working our way through the alphabet and for the letter J, we're bringing the heat with jalapeños! 

This year I'm participating in a bi-weekly challenge with some blogging friends to post recipes using all of the letters in the alphabet.  It can feature a food that begins with the letter of the week or the recipe name can contain the week's letter.

Whether you’re throwing it together for a weeknight dinner or showing off at your next potluck, this slow cooker jalapeño corn from Taste of Home is a no-fuss, flavor-packed winner.

What You’ll Need

  •     Frozen corn, cream cheese, jalapeños, butter, water, salt and pepper

 


How to Make It

  1. Toss everything into a 3-quart slow cooker.

  2. Cover it up and cook on LOW for 4–5 hours, giving it a stir every now and then.

 Tips and variations

  • Use a tomato corer to remove the seeds and membranes from the peppers.
  • Want it spicier? Keep some jalapeño seeds or swap in a hotter pepper.
  • Love cheese? Stir in a handful of shredded cheddar.
  • Want to take it over the top? Crumble some bacon on top or sprinkle with green onions.

This stuff keeps great in the fridge and reheats like a dream. Just warm it up on the stove or pop it in the microwave. Whether you’re hosting a BBQ, making a weeknight dinner, or just want something seriously tasty with minimal effort, this slow cooker jalapeño corn delivers.

Creamy Jalapeño Corn

Jalapeno Corn

Ingredients

  • 2 packages (16 ounces each) frozen corn
  • 1 package (8 ounces) cream cheese, softened and cubed
  • 4 jalapeño peppers, seeded and finely chopped
  • 1/4 cup butter, cubed
  • 2 tablespoons water
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper

Instructions

  1. In a 3-qt. slow cooker, combine all ingredients. Cover and cook on low for 4-5 hours or until corn is tender, stirring occasionally.

  2. I often saute corn and jalapeno together but have not tried making it creamy with cream cheese. Anxious to do so.

  5. I've often stir fried corn and jalapeno but have not tried it with cream cheese. I'm going to give this recipe a try especially now that fresh corn is available. And like the idea of adding some cheddar cheese too.
