Smashed Sweet Potatoes and Apples


Made in the slow cooker with brown sugar and butter, this Smashed Sweet Potatoes and Apples recipe is an easy side for weeknights and a hit at holiday dinners.

With just a few ingredients and minimal hands-on time, this dish comes together while you focus on the rest of the meal.


What You'll Need

  • Sweet potatoes
  • Tart apples
  • Apple juice
  • Brown sugar
  • Sour cream
  • Butter
  • Chives (optional)

How to Make It

1. Place sweet potatoes and apples in a 6-quart slow cooker with the apple juice.


2. Cover and cook on low for 5–6 hours, until tender.

3. Drain and return to the slow cooker. Add brown sugar, sour cream, and butter.


4. Mash to your desired consistency.


5. Garnish with chives if desired and serve. 



Tips and Tricks

  • Substitute with butternut squash: Use peeled and cubed butternut squash in place of sweet potatoes for a slightly sweeter, mild flavor and a lighter-colored mash.
  • Instant Pot version: Cook the sweet potatoes and apples on high pressure for 12 minutes, then release naturally. Continue with the recipe as stated.
  • Swap the liquid: Use apple cider (regular or hard) instead of apple juice for a more complex flavor.

Ingredients

  • 3 pounds sweet potatoes, peeled and cubed (about 8 cups)
  • 1 1/2 pounds tart apples, peeled and cubed (about 4 cups)
  • 3 cups apple juice
  • 1 cup packed brown sugar
  • 1 cup sour cream
  • 2 Tablespoons butter
  • Minced chives, optional

Instructions

  1. Place sweet potatoes and apples in a 6 quart slow cooker, add apple juice. Cook, covered, on low 5 to 6 hours or until potatoes are tender.
  2. Drain and return to slow cooker. Add brown sugar, sour cream and butter. Mash potato mixture to the desired consistency. Move to serving bowl and top with minced chives if using.
