Loaded M&M Oreo Cookie Bars

These loaded Oreo M&M cookie bars are thick, soft, and packed with Golden Oreos and mini M&Ms. Made in an 8x8 pan with melted butter and simple pantry ingredients, they come together quickly with no mixer required.

Pan of Loaded M&M Oreo Cookie bars cut into 9 squares

I decided to use Golden Oreos for this small batch recipe and swapped regular M&Ms for mini, which I like best in baked goods.

Bags of M&Ms separated into color groups

What You’ll Need

  • 1 large egg

  • 1 cup packed light brown sugar

  • ½ cup unsalted butter, melted

  • 1 teaspoon vanilla extract

  • 1 cup all-purpose flour

  • ¼ teaspoon baking soda

  • ¼ teaspoon salt

  • 18 Golden Oreo cookies, coarsely chopped

  • ½ cup milk chocolate M&M minis

How to Make It

  1. Preheat oven to 350°F and line an 8x8-inch pan with foil, letting ends extend up sides; grease the foil.

  2. In a large bowl, whisk together egg, brown sugar, melted butter, and vanilla until smooth.

  3. If desired, combine flour, baking soda, and salt separately, then stir into the wet mixture.

  4. Fold in the chopped Oreos.

  5. Spread batter evenly in the prepared pan and sprinkle the mini M&Ms on top.

  6. Bake 25–30 minutes, or until a toothpick inserted in the center comes out with moist crumbs. Do not overbake.

  7. Cool completely on a wire rack. Using the foil edges, lift the bars from the pan and cut into squares.

  8. Store in an airtight container.

For a fun twist, feel free to swap the colors of the M&Ms or try different Oreo varieties. If you enjoy these, you’ll love our M&M Oat Shortbread Bars or Chocolate Glazed Brownies.

  7. Can't go wrong with Oreos and M&Ms, unless they are the wrong color for the season. Ha ha! I probably would have done the same thing instead of going back to the store.

Easy Stuffed Waffles with Sweet and Savory Fillings

Stuffed waffles are a fun twist on the classic waffle—crispy on the outside and packed with tasty fillings inside. I recently got a stuffed waffle maker, and I’m loving how it turns waffles into little pockets of deliciousness! The best part? You don’t need a strict recipe because this is a perfect “clean out the fridge” meal. Grab whatever leftovers or fillings you have on hand, stuff ’em inside, and waffle away! Here’s what I tried this time, but feel free to get creative and make it your own.

Strawberry Pizzelles

Pizzelles are one of my favorite childhood cookies and I'm constantly looking for ways to put a new spin on them.  Since one of my favorite summer fruits is strawberries, I swapped out the vanilla in the original recipe with strawberry extract.
