How to Make Them

Prepare the Apple Filling
In a small saucepan, combine apples, sugar, water, and brown sugar. Bring to a boil over medium heat. Sprinkle with flour and cook, stirring, for 2 minutes until thickened. Stir in butter and lemon juice. Remove from heat and add vanilla. Let cool. -
Make the Topping
Combine brown sugar, flour, and oats. Cut in butter until mixture resembles coarse crumbs; set aside. -
Prepare the Muffins
In a large bowl, combine flour, sugar, baking powder, cinnamon, nutmeg, and salt. In another bowl, beat egg, milk, vanilla, and oil. Stir wet ingredients into dry just until moistened. -
Assemble
Fill greased or paper-lined muffin cups three-fourths full with batter. Drop apple mixture by tablespoonfuls into the center of each muffin. Sprinkle with topping. -
Bake
Bake at 400°F (200°C) for 20–24 minutes, or until a toothpick inserted in a muffin comes out clean. Cool 5 minutes before transferring to a wire rack. -
Glaze
Combine confectioners’ sugar and milk. Drizzle over muffins. Serve warm.
