Dutch Apple Pie Muffins

Dutch Apple Pie Muffins are tender, spiced muffins filled with warm, cinnamon apples, topped with a buttery oat streusel and finished with a sweet glaze.

What You’ll Need

For the Apple Filling:

  • 2 cups finely chopped peeled tart apples

  • 3 tablespoons sugar

  • 3 tablespoons water

  • 2 tablespoons brown sugar

  • 1 teaspoon cinnamon

  • 1 tablespoon all-purpose flour

  • 2 tablespoons butter

  • 1 teaspoon lemon juice

  • 1 teaspoon vanilla extract

For the Topping:

  • 3 tablespoons brown sugar

  • 2 tablespoons all-purpose flour

  • 2 tablespoons quick-cooking oats

  • 2 tablespoons cold butter

For the Muffin Batter:

  • 3/4 cups all-purpose flour

  • 1/2 cup sugar

  • 2 teaspoons baking powder

  • 1 teaspoon ground cinnamon

  • 1/2 teaspoon nutmeg

  • 1/2 teaspoon salt

  • 1 large egg, room temperature

  • 3/4 cup milk

  • 1 teaspoon pure vanilla extract

  • 1/4 cup canola oil

For the Glaze:

  • 1/4 cup confectioners' sugar

  • 1–2 teaspoons milk


How to Make Them

  1. Prepare the Apple Filling
    In a small saucepan, combine apples, sugar, water, and brown sugar. Bring to a boil over medium heat. Sprinkle with flour and cook, stirring, for 2 minutes until thickened. Stir in butter and lemon juice. Remove from heat and add vanilla. Let cool.

  2. Make the Topping
    Combine brown sugar, flour, and oats. Cut in butter until mixture resembles coarse crumbs; set aside.

  3. Prepare the Muffins
    In a large bowl, combine flour, sugar, baking powder, cinnamon, nutmeg, and salt. In another bowl, beat egg, milk, vanilla, and oil. Stir wet ingredients into dry just until moistened.

  4. Assemble
    Fill greased or paper-lined muffin cups three-fourths full with batter. Drop apple mixture by tablespoonfuls into the center of each muffin. Sprinkle with topping.

  5. Bake
    Bake at 400°F (200°C) for 20–24 minutes, or until a toothpick inserted in a muffin comes out clean. Cool 5 minutes before transferring to a wire rack.

  6. Glaze
    Combine confectioners’ sugar and milk. Drizzle over muffins. Serve warm.

  • 1t pure vanilla extract
  • 1/4 cup canola oil
GLAZE:
  • 1/4 cup confectioners' sugar
  • 1 to 2 teaspoons milk

Instructions
