Lil Cheddar Meat Loaves

I'm always on the lookout for easy, economical family pleasing recipes.  These Lil Cheddar Meat Loaves from Taste of Home are a perfect example of that. 

A pound of  80/20 ground beef is running just under $5 here in New England and most of the other ingredients are pantry staples.  If you don't keep fresh onion on hand you can substitute 2 tablespoons of minced dried onions. 


I revved it up a bit by swapping out half the regular ketchup for jalapeno ketchup. I liked the little zip, but you could also get that by adding a couple drops of sriracha or your favorite hot sauce to the regular ketchup. 

The recipe is easily doubled and after they are baked I move them to a clean cookie sheet, freeze them until solid and then vacuum seal them in portions. One loaf is also the perfect size for a nice sandwich on hearty bread. Thank you so much to Kathy B for sharing her recipe!

Lil Cheddar Meat Loaves

Ingredients

  • 1 large egg
  • 3/4 cup whole milk
  • 1 cup shredded cheddar cheese
  • 1/2 cup quick-cooking oats
  • 1/2 cup chopped onion
  • 1/2 teaspoon salt
  • 1 pound ground beef
  • 1/3 cup ketchup
  • 1/3 cup jalapeno ketchup
  • 1/2 cup packed brown sugar
  • 1 1/2 teaspoons prepared mustard

Instructions

  1. In a large bowl, whisk egg and milk.
  2. Stir in the cheese, oats, onion and salt.
  3. Crumble beef over mixture and mix well.
  4. Shape into 8 loaves; place in a greased 13x9-in. baking dish.
  5. In a small bowl, combine the ketchup, brown sugar and mustard; spoon over loaves.
  6. Bake, uncovered, at 350° for 25-30 minutes or until no pink remains and a thermometer reads 160°.

I love these little single portion meatloaves. The flavors sound incredible! I've always thought meatloaves were budget friendly, but your recipe proves it!

Yum!! Meatloaf is one of my favorite meals and I love changing it up sometimes. Really loving the jalapeno ketchup here!
I love small servings and these are so much fun. I've got meatloaf on my menu next week and I think I'll make these instead of my normal recipe.

Copycat Dunkin Donuts Egg White & Veggie Omelet Bites

I'm a huge fan of the Dunkin Donuts Power Breakfast sandwich, so when I started seeing ads for the new Egg White & Veggie Omelet Bites I stopped in and gave them a try.  They were delicious, but of course, I knew I could make them at home.  I started with the whites of six eggs. You can use pasturized whites if you don't want to do the whole separating, finding a use for the yolks thing.  I beat them up with some salt and pepper. Next up, the tomato and spinach.  I used grape tomatoes, seeded them and then chopped them into 1/4" pieces. I like baby spinach, and I took about 10 leaves and chopped those up into 1/4" pieces as well. Copycat Dunkin Donuts Bacon and Cheddar Omelet Bites

Since I already came up with a version of Dunkin Donuts new Egg White & Veggie Omelet Bites for myself, I decided to make the other variety that they are offering, Bacon & Cheddar, for my husband. Super simple.  Beat up some eggs with salt and pepper.  Add in some shredded cheddar and a slice of bacon cut into 1/4" pieces (I used kitchen shears).  Bake them for about 9 minutes in sprayed mini donut pans. They baked up light and fluffy.  The bacon stayed crisp and there's just the perfect amount of cheese.   I split them up into portions in zip top bags and that way we can just grab a bag and warm them up. My husband laughed when I told him 3 is the serving size.  I'll definitely be doubling the recipe next time! Lemon Pizzelles

  One of the first cookies I can remember eating is a pizzelle, and I'm still a huge fan today.  Even though you need a special iron to make them, the rest of it is really so simple. This time around I took the basic pizzelle recipe and instead of vanilla or anise, I used Adams lemon extract. I also used some of their yellow food coloring to distinguish them from my regular pizzelle.
