2 medium acorn squash, cut into 1-inch slices, seeds removed

How to Make It

Prepare the Squash
Arrange acorn squash slices in a baking dish. -
Add Cider and Spices
Pour apple cider over the squash, then sprinkle with brown sugar, salt, cinnamon, nutmeg, and optional mace. Cover with foil. -
Bake
Bake at 325°F for 40–45 minutes, until tender. Remove foil near the end if you want light caramelization. -
Serve
Serve as a side for roasted meats, or toss with cooked grains for a vegetarian option.

Instructions
- Preheat oven to 325°
- Arrange squash in a 15x10x1-in. baking pan. Pour cider over squash.
- Combine the brown sugar, salt, cinnamon and mace; sprinkle over squash.
- Cover with foil. Bake until squash is tender, 40-45 minutes.
