Cider Baked Squash


Cider Baked Squash is a simple fall side dish featuring roasted acorn squash slices glazed with apple cider and warm spices. It’s easy to prepare and perfect for dinners or holiday meals.

What You’ll Need

  • 2 medium acorn squash, cut into 1-inch slices, seeds removed

  • 1/2 cup apple cider

  • 1/4 cup brown sugar

  • 1/2 tsp salt

  • 1/4 tsp ground cinnamon

  • 1/4 tsp ground nutmeg


How to Make It

  1. Prepare the Squash
    Arrange acorn squash slices in a baking dish.

  2. Add Cider and Spices
    Pour apple cider over the squash, then sprinkle with brown sugar, salt, cinnamon, nutmeg, and optional mace. Cover with foil.

  3. Bake
    Bake at 325°F for 40–45 minutes, until tender. Remove foil near the end if you want light caramelization.

  4. Serve
    Serve as a side for roasted meats, or toss with cooked grains for a vegetarian option.

  • Serve alongside roasted chicken or pork for a complete fall meal.

  • Toss with cooked quinoa or wild rice for a hearty vegetarian option.

Can I use other types of squash?
Yes, butternut, delicata, or kabocha will work well with minor adjustments in cooking time.

How long can I store leftovers?
Store in an airtight container in the refrigerator for up to 4 days.

What can I do with the seeds?
Rinse the seeds, toss with a little oil and salt, and roast in the oven at 325°F (165°C) for 10–15 minutes until golden. They make a fun garnish for soups or salads.

Ingredients

  • 2 medium acorn squash, cut into 1-inch slices, seeds removed

  • 1/4 cup packed brown sugar
  • 1/2 teaspoon salt
  • 1/4 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg

Instructions

  1. Preheat oven to 325°
  2. Arrange squash in a 15x10x1-in. baking pan. Pour cider over squash.
  3. Combine the brown sugar, salt, cinnamon and mace; sprinkle over squash.
  4. Cover with foil. Bake until squash is tender, 40-45 minutes.
