Pumpkin Spice Coffee Shakes


These Pumpkin Spice Coffee Shakes blend pumpkin, coffee, and vanilla ice cream into a smooth, spiced drink that is full of fall flavor. Enjoy it for breakfast, an afternoon boost, or a simple dessert.

It was a gloomy day, and I needed a little pick-me-up. Coffee is my favorite mood enhancer so I made these Pumpkin Spice Coffee Shakes. They hit the spot perfectly.


What You Will Need

Ingredients

  • 2 cups whole milk

  • 1/2 cup canned pumpkin

  • 2 tablespoons sugar

  • 1 teaspoon homemade pumpkin pie spice

  • 1 cup strong brewed coffee

  • 3 teaspoons vanilla extract

  • 4 cups vanilla ice cream

  • 1 cup crushed ice

  • Sweetened whipped cream and additional pumpkin pie spice for topping


How to Make It

  1. In a small saucepan, heat milk, pumpkin, sugar, and pumpkin pie spice until bubbles form around the edges and sugar dissolves.

  2. Stir in brewed coffee and vanilla. Refrigerate, covered, overnight.

  3. In a blender, combine the chilled pumpkin-coffee mixture with ice cream and crushed ice. Blend until smooth.


Tips

  • Use pumpkin puree, not pie filling: Pie filling has sugar and spices that will change the flavor.

  • Texture check: Reduce crushed ice for a thicker shake or add a splash of milk for a thinner one.

Ingredients

  • 2 cups whole milk
  • 1/2 cup canned pumpkin
  • 2 tablespoons sugar
  • 1 teaspoon pumpkin pie spice
  • 1 cup strong brewed coffee
  • 3 teaspoons vanilla extract
  • 4 cups vanilla ice cream
  • 1 cup crushed ice
  • Sweetened whipped cream and additional pumpkin pie spice

Instructions

  1. In a small saucepan, heat milk, pumpkin, sugar and pie spice until bubbles form around sides of pan and sugar is dissolved.
  2. Transfer to a bowl; stir in coffee and vanilla. Refrigerate, covered, several hours or overnight.
  3. Place milk mixture, ice cream and ice in a blender; cover and process until blended.
  4. Serve immediately with whipped cream; sprinkle with additional pie spice.
