Key Lime Pie Cocktail

K is for Key Lime!

This Key Lime Pie Cocktail captures the flavor of key lime pie in a drink. Sweet, tart, and bright, it combines Key lime syrup, vodka, and a touch of vanilla for a refreshing treat.

This year I'm participating in a biweekly challenge with some blogging friends to post recipes using all of the letters in the alphabet.  It can feature a food that begins with the letter of the week, or the recipe name can contain the week's letter.

What You'll Need

  • For the Key Lime Syrup

    • 2 cups Nellie & Joe’s Key West Lime Juice

    • 1½ cups sugar

    For the Rim

    • Graham cracker crumbs

    For the Cocktail

    • 2 oz Key lime syrup

    • 4 oz vodka

    • 2 drops vanilla extract

    • Ice


How to Make It

Make the Syrup
Combine the lime juice and sugar in a medium saucepan. Cook over medium heat until the sugar is fully dissolved. Let cool.

Rim the Glasses
Place graham cracker crumbs in a small dish. Dip the rims of your glasses into the Key lime syrup, then into the crumbs. Set aside.

Shake the Cocktail
Add ice, Key lime syrup, vodka, and vanilla extract to a cocktail shaker. Shake about 1 minute until well chilled and condensation forms on the outside.

Serve
Strain into the prepared glasses and enjoy.

Tips & Tricks

  • Shake the cocktail until the shaker is cold and condensation forms on the outside. This ensures the drink is well mixed and properly chilled.

  • Prepare the syrup ahead of time and store in the fridge. It keeps well and makes assembling the cocktail quick.

  • For a simple garnish, float a small lime wheel or zest a bit of lime over the top.

Ingredients

For the Key lime syrup
  • 2 cups Nellie & Joe’s Key West Lime Juice
  • 1½ cups of sugar
For the rim:
  • Graham cracker crumbs
For the cocktail
  • 2 oz. Key lime syrup
  • 2 drops vanilla extract
  • 4 oz. vodka

Instructions

  1. For the syrup: Combine juice and sugar in a medium saucepan and cook until sugar is completely dissolved.
  2. Place graham cracker crumbs on a dish or small bowl. Dip rim of glasses into the syrup and then into the crumbs. Set aside.
  3. In an ice-filled cocktail shaker add 2oz Key lime syrup, 4oz vodka and a couple drops of vanilla extract. Shake until well combined, about 1 minute.
  4. Pour into prepared glasses and enjoy.

  4. I just love those glasses, they are so pretty. And as for the drink, am glad the Key Lime Pie Cocktail turned out perfect. It's a unique recipe for me. And now I know what to ask from my US relatives... Key Lime Juice :)
