Ice Cream Wafflewiches

I is for Ice Cream (and irresistible)! 

These Ice Cream Wafflewiches are sure to be a crowd-pleaser. They're easy to customize, fun to make, and even more fun to eat!

This year I'm participating in a bi-weekly challenge with some blogging friends to post recipes using all of the letters in the alphabet.  It can feature a food that begins with the letter of the week or the recipe name can contain the week's letter.

I couldn't get the standard round mini waffles so I used these adorable ones shaped like little pieces of bread instead.  Toast them according to the package directions and then let them cool completely before separating them, this helps the ice cream stay put when you start assembling.

Spread something delicious on each waffle before adding the ice cream. You can use maple syrup, chocolate syrup, strawberry jam, caramel sauce, peanut butter, Nutella. Or go wild and combine a few!

Scoop some ice cream onto one waffle, then press a second waffle on top to sandwich it. Make sure the ice cream spreads out to the edges.

Roll the edges of each sandwich in your favorite toppings, like:

  • Crushed freeze-dried strawberries

  • Mini chocolate chips

  • Crumbled cooked bacon

  • Sprinkles

  • Chopped nuts

Place them on a plate or in a baking dish and pop into the freezer until it's time to serve.

These Ice Cream Wafflewiches were a total hit with both kids and adults! They’re the perfect treat to keep stashed in the freezer for a little pick-me-up or serve them as a fun, unexpected twist at brunch.

Ice Cream Wafflewiches

Ingredients

  • 10 count box frozen mini waffles, unseparated
  • Caramel sundae syrup, strawberry syrup, chocolate syrup, maple syrup, peanut butter, Nutella
  • 2 cups vanilla bean ice cream
  • Freeze dried strawberries, mini chocolate chips, cooked and crumbled bacon, crushed nuts

Instructions

  1. Toast waffles according to package directions; separate into mini waffles and cool completely.
  2. To assemble, spread 1 teaspoon caramel syrup over a mini waffle; top with 2 tablespoons ice cream. Top with a second waffle, pressing to spread ice cream to edges.
  3. Roll sides into freeze dried strawberries, mini chocolate chips, sprinkles, crumbled bacon or nuts, place on a plate. Freeze, covered, until firm.
