Lemon Basil Chicken Salad

 

Perfect for brunch or an afternoon snack, this Lemon Basil Chicken Salad skips the mayo and uses Greek yogurt instead—ideal for those who aren't fans of traditional "salad" dishes.

 

Let me start with a little confession: I’ve never really been into traditional chicken salads. Or egg salads. Or honestly, any of those mayo-based "salad" dishes. Mayo and I just don’t get along so I was happy to find this yogurt-based recipe on the Taste of Home site! 

What ingredients do I need? 

Lemon juice, basil, cooked cubed chicken, Parmesan cheese, plain or lemon Greek yogurt, dried cranberries and glazed pecans. Shortcut tip: You can totally cut down on prep time by picking up a rotisserie chicken and one of those store-bought salad toppers with sweetened cranberries and glazed pecans.

How to Make It

  1. Toss everything into a bowl.

  2. Give it a good mix.

  3. Refrigerate until you're ready to serve.

That’s it. Gotta love a super simple recipe with minimal clean up!

How do I serve it?

It's good enough to eat by the forkful, but you can also scoop it up with crackers, spoon it into lettuce cups or pile it into mini croissants.
 

This is one of those recipes that feels fancy but takes almost no effort. It’s light, full of flavor and has just the right mix of creamy and crunchy. Even if you're not usually a fan of chicken salad (especially the mayo-heavy kind), this one might just change your mind!

Ingredients

  • 4 cups cubed cooked chicken
  • 1 cup plain or lemon Greek yogurt
  • 1/2 cup glazed pecans
  • 1/2 cup dried cranberries
  • 1 bunch fresh basil leaves, chopped
  • 1/2 cup grated Parmesan cheese
  • 4 tablespoons lemon juice
  • 1 teaspoon salt
  • 1 teaspoon lemon-pepper seasoning
  • Mini croissants, crackers or petite romaine lettuce for serving

Instructions

  1. In a small bowl, combine the first 9 ingredients. Refrigerate, covered.  Serve with mini croissants, crackers and lettuce cups.
