What You’ll Need

Frozen fully cooked meatballs work best because they’re already seasoned and just need to be heated through. Be sure to thaw them before grilling so they warm evenly and do not crack.

Bell peppers and red onion add color, sweetness, and structure. Cutting them into similar-sized chunks helps everything cook at the same rate.

BBQ sauce is brushed on near the end of grilling so it caramelizes instead of burning. You can use your favorite store-bought or homemade version depending on preference.

Wooden or metal skewers can be used. If using wooden skewers, soak them in water for at least 20–30 minutes before grilling to prevent burning.

How to Make It

  1. Thread thawed meatballs, bell peppers, and red onion onto skewers, alternating ingredients for even color and flavor.
  2. Brush lightly with olive oil and season with salt and black pepper.

  4. Place skewers on the grill and cook for 8–12 minutes, turning frequently until vegetables are tender and meatballs are heated through.

Tips for Best Results

  • For the best texture and even cooking, always thaw meatballs before grilling. Frozen meatballs can crack or heat unevenly.
  • Keep the grill at medium heat so the BBQ sauce has time to caramelize without burning.
  • Cut vegetables into similar-sized pieces so everything cooks evenly on the skewer.
  • Rotate skewers often to get even char on all sides.
  • Add BBQ sauce at the end of cooking so it becomes sticky and glazed instead of burning on the grill.
  • Use sturdy vegetables like bell peppers and red onion that hold up well over direct heat.

Serving Ideas

  • Serve as a party appetizer or game day finger food
  • Pair with rice, quinoa, or roasted potatoes for a full meal
  • Serve in pita bread or sandwich rolls for a handheld option
  • Add to a summer grilling spread with corn, salad, or grilled vegetables

FAQ

Can I use fresh meatballs instead of frozen?
Yes. Fully cooked fresh meatballs work the same way. Just make sure they are already cooked through before grilling.

Do I need to cook the meatballs before grilling?
No. Store-bought meatballs are already fully cooked. You are just heating them through and adding grill flavor.

Can I bake these instead of grilling?
Yes. Bake at 400°F for about 15–20 minutes, turning once halfway through. Brush with BBQ sauce during the last few minutes of baking.

What vegetables work best on skewers?
Bell peppers and red onion work best because they hold their shape and cook evenly. Cherry tomatoes also work well.

Can I make these ahead of time?
Yes. You can assemble the skewers a few hours ahead and refrigerate them. Grill just before serving for the best texture.

How do I keep wooden skewers from burning?
Soak them in water for at least 20–30 minutes before grilling.

Storage

Store leftover skewers in an airtight container in the refrigerator for up to 3–4 days. Reheat in a skillet, oven, or air fryer until warmed through.

  1. Fun idea, Jolene! I haven't bought the IKEA meatballs in years although we love to order them in the café there. Putting them on the list for the next visit.

Easy Stuffed Waffles with Sweet and Savory Fillings

Stuffed waffles are a fun twist on the classic waffle—crispy on the outside and packed with tasty fillings inside. I recently got a stuffed waffle maker, and I’m loving how it turns waffles into little pockets of deliciousness! The best part? You don’t need a strict recipe because this is a perfect “clean out the fridge” meal. Grab whatever leftovers or fillings you have on hand, stuff ’em inside, and waffle away! Here’s what I tried this time, but feel free to get creative and make it your own.
