Jalapeno Popper Quesadillas

These Jalapeño Popper Quesadillas are loaded with cream cheese, crispy bacon, fresh jalapeños, and melted Fiesta blend cheese. The filling is layered between two flour tortillas and baked until golden brown and crisp.


I love that these go from a handful of ingredients to the table in about 20 minutes, with very little effort. They're a great option when you need an easy meal that doesn't require much planning.

What You'll Need

Flour tortillas: You can use 4 burrito size or 8 regular sized. 
Cream cheese: Bring the cream cheese to room temperature so it spreads easily over the tortilla.
Bacon: Cook the bacon until crisp and crumble it into small pieces for the filling.
Jalapeño peppers: I used a mix of green and red jalapeños.
Fiesta blend cheese: This cheese blend melts well and pairs perfectly with the cream cheese and jalapeños.

How to Make Jalapeño Popper Quesadillas

  1. Preheat the oven to 400°F. Lightly grease a baking sheet.
  2. Place two tortillas on the prepared baking sheet. Spread evenly with the softened cream cheese.
  3. Sprinkle with the crumbled bacon, chopped jalapeño, and Fiesta blend cheese.
  4. Top with the remaining tortillas.
  5. Bake for 8 to 10 minutes, or until the tortilla is golden brown and the cheese is melted.
  6. Let cool for a few minutes before cutting into wedges.

Ingredients

  • 4 flour tortillas- burrito size
  • 4 ounces room temperature cream cheese
  • 2 slices of bacon, cooked crisp and crumbled
  • 2 jalapeno peppers, seeded and finely chopped
  • 1 cup shredded Fiesta blend cheese

Instructions

  1. Preheat oven to 400°.
  2. Place 2 tortillas on greased baking sheet. Spread with cream cheese, sprinkle with bacon, jalapeno and cheese. Top with remaining tortillas.
  3. Bake 8-10 minutes or until golden brown and cheese is melted. Cut into wedges and serve.

  5. Jolene I agree with you, quesadillas are quick and easy to make. However, I haven't baked them in the oven. It is actually a good idea especially when I have to make for 4-6 people.
