These Jalapeño Popper Quesadillas are loaded with cream cheese, crispy bacon, fresh jalapeños, and melted Fiesta blend cheese. The filling is layered between two flour tortillas and baked until golden brown and crisp.
I love that these go from a handful of ingredients to the table in about 20 minutes, with very little effort. They're a great option when you need an easy meal that doesn't require much planning.
What You'll Need
Flour tortillas: You can use 4 burrito size or 8 regular sized.Cream cheese: Bring the cream cheese to room temperature so it spreads easily over the tortilla.
Bacon: Cook the bacon until crisp and crumble it into small pieces for the filling.
Jalapeño peppers: I used a mix of green and red jalapeños.
Fiesta blend cheese: This cheese blend melts well and pairs perfectly with the cream cheese and jalapeños.

ReplyDeleteThis reminds me of the time that I made jalapeño popper grilled cheese sandwiches! So good. And quesadillas look even easier and so delicious!

ReplyDeleteCurrently wondering if I can get B.O.B. Bob to eat this. He's not the biggest fan of cream cheese...but he loves quesadillas!
ReplyDeleteJolene I agree with you, quesadillas are quick and easy to make. However, I haven't baked them in the oven. It is actually a good idea especially when I have to make for 4-6 people.
