Apple Cinnamon Streusel Muffins

These Apple Cinnamon Streusel Muffins are a quick and easy muffin recipe, made with Greek yogurt and tender apples, perfect for school lunches or weekend treats. The buttery crumb topping adds just the right amount of sweetness, making these a family favorite!

When I asked my guys what they wanted for this Muffin Monday my son requested cinnamon and my husband wanted apple.  I searched the Taste of Home site and found Michelle O's Apple Cinnamon Streusel Muffins. 

 

What You'll Need

Ingredients:

  • 1 cup all-purpose flour

  • 1/2 cup sugar

  • 1 tsp baking powder

  • 1/2 tsp baking soda

  • 1/4 tsp salt

  • 1 tsp cinnamon

  • 1/2 cup Apple Pie Greek yogurt (or sour cream)

  • 1/4 cup butter, melted

  • 1 tsp vanilla extract

  • 1 large apple, peeled and grated

  • For the streusel topping: 2 tbsp butter, 2 tbsp flour, 2 tbsp sugar

Tip: If you chop apples instead of grating, toss them with a bit of flour to prevent sinking.


How to Make It

  1. Preheat your oven to 375°F (190°C). Grease or line a 12-cup muffin tin.

  2. In a large bowl, combine flour, sugar, baking powder, baking soda, salt, and cinnamon.

  3. In another bowl, mix Greek yogurt, melted butter, and vanilla extract.

  4. Stir the wet ingredients into the dry ingredients until just combined. Fold in the grated apple.

  5. Fill muffin cups about 3/4 full.

  6. Prepare streusel topping by combining butter, flour, and sugar until crumbly. Sprinkle over muffins.

  7. Bake for 18–22 minutes, or until a toothpick inserted comes out clean. Let cool slightly before serving.


Tips for Perfect Muffins

  • Greek Yogurt: Adds moisture and a slight tang; can substitute with sour cream.

  • Apples: Grate for blended texture or chop for bigger bites; toss chopped apples in flour to prevent sinking.

  • Streusel Topping: Don’t skimp on butter; a slightly clunky topping is still delicious and adds great texture.

Ingredients

  • 2 cups all-purpose flour
  • 1 cup sugar
  • 3 teaspoons baking powder
  • 1-1/4 teaspoons ground cinnamon
  • 1/2 teaspoon salt
  • 1/2 teaspoon baking soda
  • 2 large eggs
  • 1 cup Apple Pie Greek yogurt
  • 1/4 cup butter, melted
  • 1 teaspoon vanilla extract
  • 1-1/2 cups peeled shredded tart apples
  • TOPPING:
  • 1/4 cup sugar
  • 3 tablespoons all-purpose flour
  • 1/4 teaspoon ground cinnamon
  • 2 tablespoons cold butter

Instructions

  1. Preheat oven to 400°. In a large bowl, combine dry ingredients. In another bowl, beat eggs, sour cream and butter. Stir into dry ingredients just until moistened. Fold in apples. Fill greased or paper-lined muffin cups two-thirds full.
  2. For topping, combine sugar, flour and cinnamon. Cut in butter until mixture resembles coarse crumbs. Sprinkle a rounded teaspoonful over each muffin.
  3. Bake until a toothpick comes out clean, 18-20 minutes. Cool for 5 minutes before removing from pans to wire racks. Serve warm.
