Stuffed Peanut Butter French Toast

French toast is a classic breakfast favorite, but this stuffed peanut butter version takes it up a notch. With creamy peanut butter inside and a mix of sweet and savory toppings, it’s a fun way to start your day or impress brunch guests.


What you need to make Peanut Butter French Toast

French Toast Sandwiches:

  • 8 slices whole wheat bread

  • 8 Tablespoons peanut butter (I used Peanut Butter & Co Smooth Operator)

  • 1½ cups half and half

  • 3 large egg yolks

  • 3 Tablespoons brown sugar

  • 2 teaspoons vanilla extract

  • ¾ teaspoon ground cinnamon

  • ½ teaspoon salt

  • ¼ teaspoon ground nutmeg

Toppings Flight Ideas:

  • Maple syrup

  • Strawberry jam

  • Marshmallow fluff

  • Crispy cooked bacon (cut in half)

How to Make Peanut Butter French Toast

1. Spread 2 tablespoons peanut butter on 4 slices of bread. Top with the remaining slices to make sandwiches. Set aside.


2. In a shallow bowl, whisk together half and half, egg yolks, brown sugar, vanilla, cinnamon, salt, and nutmeg.

3. Preheat a greased griddle or skillet over medium heat. Dip each sandwich in the custard mixture, soaking for 5 seconds on each side.


4. Cook sandwiches on the griddle until golden brown, about 3–4 minutes per side.

Tips for Success

  • Use quality peanut butter — the flavor really comes through! I love Smooth Operator for its creamy texture but this would be great with any of their other varieties too. 

  • Make ahead: Assemble the sandwiches the night before and refrigerate. Dip and cook fresh in the morning for an easy breakfast.

  • Get that Fluff spreading easily: If your marshmallow Fluff is too thick to spoon, microwave it with a splash of cream for 30 seconds, then stir and drizzle!

  • Go sweet or savory: The toppings flight lets everyone build their perfect bite. Try pairing bacon with maple syrup for a salty-sweet combo that’s seriously delicious.
