Caramel Truffles

So excited to be participating in this month's Candy Fantastical Food Fight! I wanted to jump in on this one because candy isn't something that I make very often.  To help chose my recipe, I spent some time thinking about what my guys love to eat and scrolling through my Pinterest boards.

Caramels were a big hit back in October, and they are huge fans of truffles, so when I saw this recipe from Taste of Home, I knew it'd be a winner.  I liked that the whole thing is made in the microwave, and you don't have to mess with thermometers or anything like that.

I made the recipe as written this time around, using milk chocolate and semi sweet chips. Next time I'd definitely split the batch in two and do some with dark chocolate, which is my favorite.  The hardest part of the whole thing was doing the math to get 30 squares out of an 8x8 pan!

I dipped the caramels as directed, then I went back and drizzled more chocolate in a decorative pattern of the top using a fork. Some I hit with holiday sprinkles.  I let them set completely and then popped them into the little paper candy cups.  They looked amazing on platter, but even more so when I put them into shallow gift boxes!

Caramel Truffles

Yield: 30


  • 26 caramels
  • 1 cup milk chocolate chips
  • 1/4 cup heavy whipping cream
  • 1 1/3 cups semisweet chocolate chips
  • 1 tablespoon shortening


  1. Line an 8-in. square dish with plastic wrap; set aside. In a microwave-safe bowl, combine the caramels, milk chocolate chips and cream. Microwave, uncovered, on high for 1 minute; stir. Microwave 1 minute longer, stirring every 15 seconds or until caramels are melted and mixture is smooth. Spread into prepared dish; refrigerate for 1 hour or until firm.
  2. Using plastic wrap, lift candy out of pan. Cut into 30 pieces; roll each piece into a 1-in. ball. Cover and refrigerate for 1 hour or until firm.
  3. In a microwave-safe bowl, melt semi-sweet chips and shortening; stir until smooth. Dip caramels in chocolate; allow excess to drip off. Place on waxed paper; let stand until set. Refrigerate until firm.

What an easy way to make a beautiful chocolates. A great hostess gift! The math would be my most difficult part too. Definitely making these!

First I got out a calculator, nope. Then I cut out an 8x8 piece of paper and tried to fold it into the appropriate amount of squares. I think I ended up with 36, but it just made it easier to pop into your mouth ;)

It's a great group of magazines. I've gotten them since the 90s, made over 250 recipes from them, and have been a Volunteer Field Editor since 2015. :)

They really would make great gifts. I'll be making another couple of batches to put on the cookie trays we give to friends, family, and the police/fire department.

Oh this is absolutely right up my alley! I agree that dark chocolate would be great with it too. I'd even do a little sprinkle of sea salt on top.

Yes! Sea salt would be the perfect topper. I definitely will be making another batch with dark chocolate soon!

You can melt everything using a double boiler. Just be sure that no water gets into the chocolate or it will seize up (been there, done that!).

Copycat Dunkin Donuts Egg White & Veggie Omelet Bites

I'm a huge fan of the Dunkin Donuts Power Breakfast sandwich, so when I started seeing ads for the new Egg White & Veggie Omelet Bites I stopped in and gave them a try.  They were delicious, but of course, I knew I could make them at home.  I started with the whites of six eggs. You can use pasturized whites if you don't want to do the whole separating, finding a use for the yolks thing.  I beat them up with some salt and pepper. Next up, the tomato and spinach.  I used grape tomatoes, seeded them and then chopped them into 1/4" pieces. I like baby spinach, and I took about 10 leaves and chopped those up into 1/4" pieces as well. I added that to the egg mixture.  When you pour it into the pans, be sure that it all gets evenly distributed.   They bake up pretty quickly, around 9 minutes or so.  Dunkin gives you two egg bites, the mini donut serving size is three. Copycat Dunkin Donuts Bacon and Cheddar Omelet Bites

Since I already came up with a version of Dunkin Donuts new Egg White & Veggie Omelet Bites for myself, I decided to make the other variety that they are offering, Bacon & Cheddar, for my husband. Super simple.  Beat up some eggs with salt and pepper.  Add in some shredded cheddar and a slice of bacon cut into 1/4" pieces (I used kitchen shears).  Bake them for about 9 minutes in sprayed mini donut pans. They baked up light and fluffy.  The bacon stayed crisp and there's just the perfect amount of cheese.   I split them up into portions in zip top bags and that way we can just grab a bag and warm them up. My husband laughed when I told him 3 is the serving size.  I'll definitely be doubling the recipe next time! Strawberry Pizzelles

Pizzelles are one of my favorite childhood cookies and I'm constantly looking for ways to put a new spin on them.  Since one of my favorite summer fruits is strawberries, I swapped out the vanilla in the original recipe with strawberry extract.  This post is sponsored in conjunction with #SummerDessertWeek !  I received product samples from sponsor companies to aid in the creation of my recipes.
