Oreo Mousse Cake

O is for Oreo!

This year I'm participating in a bi weekly challenge with some blogging friends to post recipes using all of the letters in the alphabet.  It can feature a food that begins with the letter of the week or the recipe name can contain the week's letter.

We have an an extraordinarly hot summer. I knew I wanted to do a dessert using Oreos for this week's recipe and this Oreo Mousse Cake from Taste of Home was absolutely perfect because it's no bake and only five ingredients!

First you mix together melted butter and Oreo crumbs.  I used 36 Double Stuff and crushed them in the food processor. Press the mixture gently into the bottom of a sprayed springform pan and pop it into the fridge.

Next up, melt some semi sweet chocolate.  You can buy the bars and cut it up or you can use chips.  I melted them in a glass bowl in 30 second intervals, dropping to 15 when I got close to fully melted.

While the chocolate is cooling, whip up some heavy cream and confectioner's sugar until stiff peaks form.  Normally I'd pop the beaters and bowl in the freezer beforehand but some reviewers had trouble with the chocolate not incorporating well so I didn't.

Gently fold 4 cups of the whipped cream into the cooled melted chocolate.  You want to take your time and keep as much air in the mixture as possible.

There shouldn't be any streaks of white left when you're done. Spread that over the Oreo/butter crust.


Gently spread the remaining whipped cream over the mousse layer.  Sprinkle the top with more Oreo crumbs or decorate it with whole Oreos if you like. Place the cake into the fridge for at least 3 hours. I left mine overnight.

 

Very gently unlatch the springform pan and carefully lift the ring off. For nice clean slices, dip the knife into a glass of hot water and then wipe it dry on a towel in between cuts.

You'd never believe that this is just five simple ingredients because each layer is so vastly different. It would also be great layered in glasses for a single serve portions.  You can change up the Oreos to any flavor you'd like, there's so many different kinds now.

Ingredients

  • 36 Oreo cookies, crushed
  • 1/3 cup butter, melted
  • 8 ounces semisweet chocolate, chopped
  • 4 cups heavy whipping cream
  • 3/4 cup confectioners' sugar
  • Additional whole or crushed Oreos, optional, for decoration

Instructions

  1. In a small bowl, mix 2 cups crushed cookies and butter. Press onto bottom of a greased 9-in. springform pan. Refrigerate until ready to use.
  2. In a large microwave-safe bowl, microwave chocolate on high just until melted; stir until smooth. Cool to room temperature.
  3. In another bowl, beat cream and confectioners' sugar until stiff peaks form; fold 4 cups into chocolate mixture. Spread over crust.
  4. Spread remaining whipped cream over top. Cover and refrigerate until set, about 3 hours. If desired, garnish with additional Oreo cookies or crumbs.

  2. Love this simple and easy dessert. Perfect for parties. Usually don't like Oreos on their own but as a part of a dessert, they work so well.
