New England Iced Tea

N is for New England!

For the letter N in the alphabet challenge, I made New England Iced Tea — a twist on the classic Long Island cocktail that’s tart and wicked refreshing.

This New England Iced Tea is basically a party for two: five different liquors, fresh lime juice, and a splash of cranberry that gives it that regional vibe. It’s quick to build right in your glass so you can kick back and enjoy.

What You’ll Need

  • Mini measuring cup or jigger
  • Long spoon or stirrer
  • Two old-fashioned glasses or 16 oz Ball jars
  • Ice

Ingredients (serves 2)

  • 4 tablespoons sugar
  • 2 ounces vodka
  • 2 ounces light rum
  • 2 ounces gin
  • 2 ounces triple sec
  • 2 ounces fresh lime juice
  • 2 ounces tequila
  • 4 ounces cranberry juice (or cranberry juice cocktail)
  • Ice

Optional garnish: frozen cranberries and orange slices

How to Make It:

  • In each glass, stir together 2 tablespoons sugar and 1 ounce lime juice until the sugar dissolves.
  • Add 1 ounce each of vodka, rum, gin, triple sec, and tequila to each of the two glasses. Stir gently to combine.
  • Fill the glasses with ice.
  • Top each glass with 2 ounces cranberry juice.
  • Garnish with a few frozen cranberries and an orange slice on the rim, if desired.

Need cocktails for a crowd?

Making this a party in a pitcher is easy. Just make the batch ahead, then pour over ice and garnish when it’s time to enjoy.

Ingredients:

2 cups fresh lime juice

1 cup sugar

1 cup vodka

1 cup light rum

1 cup gin

1 cup triple sec

1 cup tequila

2 cups cranberry juice (or cranberry juice cocktail)

Instructions:

  1. In a large pitcher, stir together the lime juice, sugar, vodka, rum, gin, triple sec, tequila, and cranberry juice until the sugar dissolves.

  2. Refrigerate until ready to serve.

  3. Serve over ice in glasses, adding a citrus slice or a few frozen cranberries to each glass.

Stuffed Waffles

I wasn't sure I was going to blog these stuffed waffles since it was the first time I tried using the new iron but since I'd already taken the pics as I went I figured, why not? They aren't perfect but they are delicious!

Strawberry Pizzelles

Pizzelles are one of my favorite childhood cookies and I'm constantly looking for ways to put a new spin on them.  Since one of my favorite summer fruits is strawberries, I swapped out the vanilla in the original recipe with strawberry extract.
