It's easy to make in one skillet, uses just a few simple ingredients, and goes great with just about anything from the grill, oven, or stovetop. What You'll Need
- 2 tablespoons olive oil
- 1 jalapeño pepper, thinly sliced
- 1 teaspoon shallot pepper
- 1 pound fresh green beans, cut into 2-inch pieces
- 1/2 teaspoon salt
- Zest from one lemon
How to Make Them
- In a large cast-iron or other heavy skillet, heat olive oil over medium-high heat.
- Add the sliced jalapeño and cook, stirring, until tender, about 2 to 3 minutes.
- Add green beans, shallot pepper, and salt. Stir to coat evenly.
- Cook and stir for 8 to 10 minutes, until beans are tender. Reduce heat if needed to prevent over-browning.
- Transfer to a serving plate and zest the lemon over the top.
- Serve immediately.
Tips and Variations

For a milder dish, remove the seeds from the jalapeño before sautéing.

No shallot pepper? Use 1–2 tsp minced fresh shallot with the jalapeño and season the beans with salt and freshly ground black pepper.
