G is for Garlic, Gnocchi and Green Beans!
This year I'm participating in a bi weekly challenge with some blogging friends to post recipes using all of the letters in the alphabet. It can feature a food that begins with the letter of the week or the recipe name can contain the week's letter.
It's going to be a hectic week around here so after I assessed the choices I got in my pick up for the challenge I decided I wanted to make it as simple as possible. Very little prep, only using one pan and just a few ingredients.
I heated some extra virgin olive oil over medium heat and then added the shelf stable gnocchi. You can absolutely make your own if you like. Move them very gently around the pan until they are crispy on the outside and pick up a little bit of golden color.
Reduce the heat to low and then add in the butter. Continue to gently stir until the butter is foamy, then add in fresh minced garlic.
I am a big fan of steam in bag frozen cut green beans, we eat them a few times a week. I added the entire bag to the skillet without defrosting them. Cook and stir gently until the green beans are crisp tender. If you want the green beans more cooked through then partially defrost them in the microwave.
Add in basil, freshly cracked black pepper and a sprinkle of Parmesan cheese. You can really use any herbs you like, parsley, rosemary, thyme, sage or even oregano all would be incredible.
I topped mine off with some crushed red pepper flakes and a smidge more Parmesan cheese. If you're not a fan of green beans you could use asparagus, bell peppers. Personally I would have love this even more with some halved grape tomatoes but I didn't have any.

Garlic Butter Gnocchi and Green Beans
Ingredients
- 16oz potato gnocchi, shelf stable
- 1 Tablespoon extra virgin olive oil
- 3 to 5 cloves of garlic, minced
- 4 Tablespoons butter, cut into cubes
- 10oz frozen cut green beans
- 1 teaspoon dried basil
- Fresh cracked black pepper, to taste
- 1/4 cup Parmesan cheese
- Crushed red pepper flakes, optional
Instructions
- Heat oil in a large skillet over medium heat. Add gnocchi. Lightly move around the pan until the outside is crisp and gets a little golden color on them.
- Reduce heat to low. Add in butter. Cook and stir gently until butter is melted and foamy.
- Add garlic, green beans, basil, and pepper. Continue to stir gently and cook until the green beans are defrosted and crisp-tender.
- Top with Parmesan cheese and crushed red pepper flakes, if desired .
