F is for Funfetti!
These fluffy, festive Funfetti Pancakes, with colorful sprinkles folded into the batter, make a cheerful breakfast perfect for birthdays, weekends, or any morning that deserves a little fun.
Using a combination of pancake mix and cake mix makes this recipe quick and easy to prepare.
What You'll Need
- 1 cup pancake mix (I like Bisquick)
- 1 cup Funfetti cake mix
- 2 large eggs, room temperature
- 1 1/2 cups whole milk
- 1 teaspoon vanilla extract
- Whipped cream, for serving
- Additional sprinkles, if desired
How to make them
- In a large bowl, whisk together the pancake mix and Funfetti cake mix.
- In a separate bowl, whisk the eggs, milk, and vanilla extract until well blended.
- Add the wet ingredients to the dry ingredients and stir just until moistened. Let the batter stand for 10 minutes.
- Heat a lightly greased griddle or skillet over medium heat.
- Pour 1/4 cup portions of batter onto the griddle. Cook until bubbles form on the surface and begin to pop, then flip and cook until golden brown. Repeat with remaining batter.
- Serve warm topped with whipped cream and additional sprinkles, if desired.
Tips
- If you can't find Funfetti cake mix you can use 1 cup white or yellow cake mix and 1/4 cup sprinkles.
- Use a cookie scoop to portion the batter for evenly sized pancakes and easier flipping.
- Thin store-bought vanilla frosting with a little milk and drizzle over the pancakes for an easy topping.
How to Store Them
- Store leftover pancakes in an airtight container in the refrigerator for up to 3 days.
- Reheat in the microwave or on a skillet until warmed through.
- For longer storage, freeze pancakes in a single layer, then transfer to a freezer-safe bag for up to 2 months. Reheat from frozen in the microwave or toaster.
