Funfetti Pancakes


F is for Funfetti!

These fluffy, festive Funfetti Pancakes, with colorful sprinkles folded into the batter, make a cheerful breakfast perfect for birthdays, weekends, or any morning that deserves a little fun.
Using a combination of pancake mix and cake mix makes this recipe quick and easy to prepare.

What You'll Need

  • 1 cup pancake mix (I like Bisquick)
  • 1 cup Funfetti cake mix
  • 2 large eggs, room temperature
  • 1 1/2 cups whole milk
  • 1 teaspoon vanilla extract
  • Whipped cream, for serving
  • Additional sprinkles, if desired

How to make them

  1. In a large bowl, whisk together the pancake mix and Funfetti cake mix.
  2. In a separate bowl, whisk the eggs, milk, and vanilla extract until well blended.
  3. Add the wet ingredients to the dry ingredients and stir just until moistened. Let the batter stand for 10 minutes.
  4. Heat a lightly greased griddle or skillet over medium heat.
  5. Pour 1/4 cup portions of batter onto the griddle. Cook until bubbles form on the surface and begin to pop, then flip and cook until golden brown. Repeat with remaining batter.
  6. Serve warm topped with whipped cream and additional sprinkles, if desired.

Tips

  • If you can't find Funfetti cake mix you can use 1 cup white or yellow cake mix and 1/4 cup sprinkles.
  • Use a cookie scoop to portion the batter for evenly sized pancakes and easier flipping.
  • Thin store-bought vanilla frosting with a little milk and drizzle over the pancakes for an easy topping.

How to Store Them

  • Store leftover pancakes in an airtight container in the refrigerator for up to 3 days.
  • Reheat in the microwave or on a skillet until warmed through.
  • For longer storage, freeze pancakes in a single layer, then transfer to a freezer-safe bag for up to 2 months. Reheat from frozen in the microwave or toaster.
